A soft, fluffy, and delicious spinach dhokla that's perfect for breakfast, snacks, lunchboxes, or serving to guests. Easy to make and full of flavour! Prep time: 10 minutes Resting time: 30 minutes Steaming time: 20 minutes Ingredients For the dhokla 2 cups fresh spinach 1 cup semolina (suji/rava) ½ cup yogurt (curd) Salt to taste Water as needed ½ tsp baking soda or fruit salt (Eno) For the tadka 1–2 tbsp mustard oil 1 tsp mustard seeds ½ tsp cumin seeds 1 tsp sesame seeds 2 green chillies, chopped 8–10 curry leaves Optional vegetables Grated carrot Finely chopped capsicum Finely chopped onion Method 1. Prepare the spinach puree: Wash the spinach thoroughly and cook it in a pan until wilted. Transfer it to cold water, drain, and blend into a smooth puree. 2. Make the batter: In a bowl, combine semolina, yogurt, spinach puree, salt, and a little water. Mix well to form a smooth batter. 3. Rest the batter: Leave it to rest for 30 minutes so the semolina can absorb the moisture. 4. Adjust the consistency: Check the batter after resting. If it is too thick, add a little water to achieve a pourable consistency. 5. Add the raising agent: Add baking soda or fruit salt just before steaming and mix gently. 6. Steam the dhokla: Grease a steaming mould, pour in the batter, and steam for about 20 minutes, or until a toothpick inserted in the centre comes out clean. 7. Prepare the tadka: Heat mustard oil in a pan. Add mustard seeds, cumin seeds, sesame seeds, green chillies, and curry leaves. Let them sizzle. 8. Add the tadka: Pour the hot tempering evenly over the steamed spinach dhokla. 9. Cut and serve: Allow it to cool slightly, cut into pieces, and enjoy your soft, flavourful spinach dhokla! #quickkkitchen #recipeoftheday #recipeshare #recipes #dhokla by @quickkkitchen
