Final Drop: The Farewell Showcase — Racèmes

This is it: my final drop, and the end of a legendary chapter.

To close out my final week, we are shining the light on one of the most exciting, hyper-confidential projects in the Loire Valley: @racemes.fr , founded by Arthur and my dear friend of 15 years, @zoulanski . Roman is a total rockstar: he was actually the DJ at my wedding!

Crafted with pure soil-to-glass authenticity, these wines are electric, mouthwatering, and made for long, hedonistic nights. Secure these personal favourites before I say goodbye:

SPARKLING

1. Pigments 2023 (Sparkling Pineau d’Aunis) | Electric, crunchy & bright wild red berries with a mouthwatering bubble.

2. Montlouis-sur-Loire “Contrechamp” 2023 (Sparkling Chenin Blanc) | Laser-focused, citrus zest & persistent tension.

WHITE (CHENIN BLANC)

3. Pigments 2024 | The brand-new still release. Pure, raw energy & jaw-dropping aromatics.

4. Montlouis-sur-Loire “Toponyme” 2023 Magnum (150cl) | Rare first-vintage magnum! Richer texture & razor-sharp limestone drive.

5. Montlouis-sur-Loire “Toponyme” 2024 (75cl & Magnum) | High-wire tension & pristine Montlouis chalky power.

WHITE (SAUVIGNON BLANC)

6. Archipel 2024 (75cl & Magnum) | Wildly expressive, aromatic & dangerously refreshing. Big magnum energy.

RED (GROLLEAU NOIR)

7. Jalon 2024 (75cl & Magnum) | Pure joy. Silky light red fruit, effortless drinkability & high-energy red power.

Nicolas’ Boutique Favourites: Chapter 11

For the uninitiated, this daily countdown spotlights my favourite wines from @bacchic.co wine boutique: the bottles I simply want everyone to enjoy as often as humanly reasonable.

We wrap up our @racemes.fr feature with a bottle that is pure, liquid therapy. Look, I am French. Losing to Spain in the World Cup semi-final this morning hurt. But if there is one wine built to wash away the sorrow and bring instant comfort, it’s this crunchy, juicy masterpiece from Roman and Arthur. In fact, I had some by the pool and barbecue last Saturday, and it was just great to enlighten the mood!

Jalon 2024

While the 2023 vintage had a splash of Pineau d’Aunis, the 2024 is 100% Grolleau Noir, a native grape unique to the Loire Valley. They opted for 15 days of whole-cluster vinification (up from 7 days in 2023) to extract beautiful nutrients and structure, aging the main juice in tank while pushing the press wine into barrel for extra body before blending.

The result is dangerously yummy. The nose is loaded with crunchy red fruits, dark berries, and a signature peppery kick. If you catch a slight reduction at first, just let it breathe in the glass for a minute: it vanishes to reveal a gorgeous, bloody mid-palate reminiscent of fresh blood orange. Compared to the 2023, it has far brighter, crunchier fruit. It’s serious and a little tight on the mid-palate, but honestly, it’s so energetic you’ll drink the 2024 twice as fast.

As for food? Pair it with charred octopus or spicy fish. Yes... it sounds exactly like Spanish food. Call it delicious revenge.

- Jalon 2024 at $60 per 75cl / $360 per OC6
- Jalon 2024 (Magnum) at $125 per 150cl

Nicolas’ Boutique Favourites: Chapter 10

For the uninitiated, this daily countdown spotlights my absolute favourite wines from @bacchic.co wine boutique: the bottles I simply want everyone to enjoy as often as humanly reasonable.

We are back with Chapter 3 of our @racemes.fr spotlight: the brilliant Loire project started by my long-time friend (and wedding DJ) Roman, alongside his partner Arthur. Today’s bottle is an absolute summer essential. Let’s be honest: I normally don’t like Sauvignon Blanc. But I absolutely cannot get enough of this one. If you’ve been burned by industrial Sauvignon Blanc in the past, this will completely change your mind.

Archipel 2024

We missed out on the 2023 vintage because it sold out instantly, so we didn’t make the same mistake twice. Sourced from a unique clay and silex plot called Perruches, this is 100% Sauvignon Blanc aged entirely in fiberglass tanks with zero oak to protect its vibrant crunch.

The nose is a total knockout: exotic, hyper-refreshing, with hints of crispy lychee without a single note of that cheap, aggressive greenness. It’s so aromatic that people often compare it to a premium Alsatian Muscat or Gewürztraminer. On the palate, it is mouthwatering, bright, and dangerously easy to drink. Drink it over the next 3 to 4 years, ideally paired with fresh oysters or served ice-cold on a boat.

Archipel 2024 at $65 per 75cl / $390 per OC6

Archipel 2024 (Magnum) at $135 per 150cl

Nicolas’ Boutique Favourites: Chapter 9

For the uninitiated, this daily countdown spotlights my absolute favourite wines from @bacchic.co wine boutique: the bottles I simply want everyone to enjoy as often as humanly reasonable.

We are back with Chapter 2 of our @racemes.fr spotlight. Our latest shipment landed last month, and we gathered the boutique team to taste through it on a live stream with Roman in France. Today’s focus is on two bone-dry Chenin Blanc expressions from the 2024 vintage, defined by a gorgeous, electric core of high acidity.

Choose your style:

1. Pigments 2024

Plot twist: while the 2023 Pigments was a sparkling red grape, the 2024 is a still Chenin Blanc. Sourced from schist soils in Anjou (right next to the legendary Benoît Courault), it is lean, laser-focused, and packed with pomelo and a high-acid, saline finish. It’s that perfect mid-tier transition juice—exactly what you open when you don’t want a beer but aren’t ready for a heavy wine. Outstanding with oysters.

- Pigments 2024 at $65 per 75cl / $390 per OC6

2. Toponyme 2024

Sourced from clay and limestone in Montlouis and bottled in December 2025. This is a much richer, multi-layered beast than Pigments. The nose has a sharp, beautifully herbaceous edge, while the palate brings ripe stone fruits. Subtle oak aging adds a luxurious creaminess to the texture without any actual woody taste, finishing with a unique, savory asparagus undertone. Decant it if it’s tight, and pair it with cream-sauced chicken or mature cheeses.

- Toponyme 2024 at $70 per 75cl / $420 per OC6
- Toponyme 2024 (Magnum) at $145 per 150cl
- Toponyme 2023 (Magnum) at $145 per 150cl

Nicolas’ Boutique Favourites: Chapter 8

For the uninitiated, this daily countdown spotlights my absolute favourite wines from @bacchic.co wine boutique: the bottles I simply want everyone to enjoy as often as humanly reasonable.

We are staying in the Loire, but shifting from towering icons to a project dear to my heart: @racemes.fr. It was started by my long-time friend (and my wedding DJ) Roman, alongside his partner Arthur. We will spend four chapters on them, starting with their two killer méthode champenoise, brut nature sparkling cuvées.

Choose your vibration:

- Pigments 2023 at $65 per 75cl

A stroke of genius. 100% Pineau d’Aunis (a deeply fashionable red grape) vinified here as an incredibly rare blanc de noirs. Light (10% ABV) and thirst-quenching. I open this when I don’t feel like a beer, but don’t want Champagne either. It is the perfect first drink of the day for weekend lunches or pool sessions. It’s entirely sold out at the domaine, but we snapped up their very last batch.

- Contrechamp 2023 at $70 per 75cl

The serious sibling. 100% Chenin Blanc from Montlouis-sur-Loire, aged 18 months on the lees (six months longer than the previous batch). Creamier, rounder, and richer, it is poured by the glass at a Michelin-starred restaurant in Bordeaux as a Champagne alternative. Crucially, mildew completely wiped out their 2024 harvest; there is no follow-up coming. This is your last chance.

(Reminder: free delivery kicks in at $500, so grab a few of each before they vanish.)
