Originally from Emilia-Romagna, 𝐄𝐱𝐞𝐜𝐮𝐭𝐢𝐯𝐞 𝐈𝐭𝐚𝐥𝐢𝐚𝐧 𝐂𝐡𝐞𝐟 𝐆𝐢𝐚𝐧𝐚𝐧𝐝𝐫𝐞𝐚 𝐑𝐨𝐬𝐬𝐢 draws upon his culinary roots to bring together traditional Italian flavours and thoughtful contemporary touches.

The menu moves from delicate burratina with roasted tomatoes, pistachios and fragrant basil to linguini with lobster, Taggiasca olives and pomodoro sauce. For seafood lovers, the Mediterranean-style roasted sea bass offers another expression of Italy's coastal cuisine.

An island escape is not always about how much you discover, but sometimes about finding somewhere worth slowing down for.

On my first visit to Koh Samui, 𝐑𝐞𝐧𝐚𝐢𝐬𝐬𝐚𝐧𝐜𝐞 𝐊𝐨𝐡 𝐒𝐚𝐦𝐮𝐢 𝐑𝐞𝐬𝐨𝐫𝐭 & 𝐒𝐩𝐚 introduced me to a quieter rhythm of island life.

Set among tropical gardens, the resort's Thai-inspired architecture, warm timber interiors and winding pathways create an atmosphere that feels intimately connected to its surroundings.

My 𝐏𝐫𝐢𝐯𝐚𝐭𝐞 𝐏𝐨𝐨𝐥 𝐕𝐢𝐥𝐥𝐚 was a particular highlight, with its romantic four-poster bed, traditional wooden details and a secluded pool surrounded by greenery.

Beyond the villa, evenings unfolded over seafood at 𝐓𝐚𝐰𝐚𝐍𝐍, moments of relaxation at 𝐐𝐮𝐚𝐧 𝐒𝐩𝐚, and leisurely afternoons between the tropical swimming pool and the shoreline.

What I enjoyed most was the freedom to experience the island at my own pace, whether discovering another corner of the resort or simply enjoying the view.

Bangkok takes on a different character after sunset, particularly when viewed from the Chao Phraya River.

Aboard 𝐌𝐚𝐧𝐨𝐡𝐫𝐚 𝐂𝐡𝐚𝐧𝐝𝐫𝐚 at 𝐀𝐧𝐚𝐧𝐭𝐚𝐫𝐚 𝐑𝐢𝐯𝐞𝐫𝐬𝐢𝐝𝐞 𝐁𝐚𝐧𝐠𝐤𝐨𝐤 𝐑𝐞𝐬𝐨𝐫𝐭, a traditional Thai rice barge becomes the setting for an intimate evening of dining and riverside discovery.

The vessel's interiors, reimagined by Kathleen Heinecke, reflect a considered balance between Thai heritage and contemporary refinement.

For this journey, I opted for the 𝐕𝐞𝐠𝐞𝐭𝐚𝐫𝐢𝐚𝐧 𝐒𝐞𝐭, a departure from the seafood and meat selections often associated with luxury dining cruises.

It was an interesting opportunity to experience Thai flavours through a different culinary approach. More importantly, it was a genuinely enjoyable meal, proving that a vegetarian selection can be just as rewarding within a fine dining experience.

Over the course of two hours, the city gradually unfolds along the river. Historic architecture, illuminated temples and the changing Bangkok skyline provide a sense of place that no conventional dining room could quite replicate.

What I appreciated most was the unhurried nature of the experience. There was time to enjoy each course, observe the passing scenery and appreciate Bangkok from a perspective that feels both familiar and entirely different.

A leisurely Sunday afternoon, surrounded by tropical greenery and the gentle sound of cascading water, right in the heart of Bangkok.

At 𝐑𝐨𝐦𝐬𝐚𝐢, 𝐁𝐚𝐧𝐲𝐚𝐧 𝐓𝐫𝐞𝐞 𝐁𝐚𝐧𝐠𝐤𝐨𝐤, the newly introduced 𝐋𝐢𝐟𝐞𝐬𝐭𝐲𝐥𝐞 𝐒𝐮𝐧𝐝𝐚𝐲 𝐁𝐫𝐮𝐧𝐜𝐡 brings together an extensive international culinary selection in a setting that feels pleasantly removed from the city's busy streets.

The experience moves from fresh seafood and sashimi to premium grilled selections, beautifully prepared carving specialities, Asian favourites and live cooking stations, with a generous assortment of desserts to finish.

What I particularly appreciate about Romsai is the atmosphere. The surrounding greenery, natural light and relaxed pace make it a lovely setting for a long Sunday lunch, where the pleasure comes as much from the surroundings as from the food itself.

A refined yet approachable way to spend an afternoon in Bangkok, with time to explore different flavours and enjoy good company.
