Too good not to post… today’s creation:
Chicken Tortilla Soup!!

Ingredients:
- rotisserie chicken
- chicken stock
- corn
- tomatoes
- onion
- potatoes
- green chilis
- paprika, chili powder, salt, & pepper
- cilantro & lime

Toppings:
- avocado
- jalapeño
- lime
- shredded cheese
- sour cream

Although I prefer finding amazing food made by others, I’ve made it a goal this year to try cooking new recipes for myself. Here are a few highlights of favorites so far!

- mushroom risotto & grilled chicken
- white chicken chili
- roasted red pepper, chicken, and cauliflower bowls
- garlic chili chicken on a baked potato w/ green beans
- spaghetti aglio e olio, grilled chicken & bruschetta
