Natalia handed us the keys before summer, these Coos shots included, plus one order: “write something really nice about them.” A few weeks late, here they are.

Coos makes it easy. Red-and-white café curtains, a stainless-steel bar, two sisters from a family of bakers (Rachel & Rosanne), a room named after their granddad Coos, and Mira and the team making you feel at home before the cup lands. Thanks for pouring Barista Cacao.

Here’s Mourad. From the minute you meet him it feels like you’ve known him for years. And you’re never out with just Mourad. Somewhere along the way you always end up meeting someone new. Watch the video, you’ll see what we mean.

One thing the video doesn’t show: Mourad walks everywhere. The whole city, on foot. It’s how he keeps his days from feeling like one big rush. He might be onto something.

Thank you Natalia and Matthijs. This series started as just an idea, we put Lex from Olafbrood on a bar stool and pressed record. People liked it so much that a second one simply had to happen. That was before we knew how much work goes into a video like this. Now we know and it’s worth it.

Please meet Iman. We met her behind the bar at Luuks, and in our early days she was the one pouring our Barista Cacao at events, back when we were still learning the pour ourselves. The latte art in our campaign photos? Also her.

Now she has a place of her own: @081.coffee , named after her beloved Napoli. If you know the city, you know the number. Her sfogliatelle come from there too. Sfoglia... what? Yes, we can’t pronounce it either. But it tastes amazing.

So go. For a coffee, for a cacao, and whatever else you order, definitely a sfogliatella.

Day 650. A while ago we pressed one button and months of work left our hands. This is where it went: the first run of the new packaging, rolling off the machine. Strange feeling, something you moved around pixel by pixel, suddenly exists by the thousands.

One thing. On this video they look almost white, and they’re supposed to be cream. We’re telling ourselves it’s the footage. We’ll know when they land in Amsterdam.

Please meet Anna. Together with Thomas, her partner, they built Papillon into exactly what it had to become: the place that feeds a whole neighbourhood. Coffee, cacao and bread in the morning, pasta in the evening.

They have two boys, and they just moved to Bergen. In Amsterdam they serve the neighbourhood. In Bergen they find the quiet they’ve earned.

After the shoot they sat us down and gave us both halves at once: pappardelle al ragu, fresh bread, a glass of wine. Thank you Anna, thank you Thomas. And Stella and the rest of the team too.

This looks like a flat white. It isn’t. It’s cacao where the espresso would be. Same milk, same barista, and yes, the latte art works.

This is Jette, co-founder of Reclaem. And the one you walk to when you’ve been going in circles for hours and still don’t know. She listens, asks you one question, and suddenly you do know. We don’t fully understand how she does it either.

First time we’re showing this one. Our own cup. 300 ml, steel, and Natalia wrote “for the moment, not the rush” on the side in her own handwriting.

We had a batch made and honestly we like them more than we expected to. They go everywhere now. Iced cacao, water, coffee, wine. Morris keeps taking his into the sauna, where a steel cup gets too hot to touch. He knows. He keeps doing it. Daan already calls it another ‘handenbrandertje’. He’s not wrong.
