I hadn't baked much in the past couple of year as the kitchen and oven were not the best. But now with a beautiful and spacious kitchen and a new @kitchenaid_uk I am getting back to it (even if it means baking while carrying bébé!)

Started with shaping butter to insert in a leavened dough that I laminated to make proper croissant. Some good definition visible but not quite there yet, might need more proving?
I also baked chocolate chip baguette viennoise. Delicious and will do again as it is perfect for breakfast.
Classic tarte aux pommes with a homemade puff.
Pistachio baked cheesecake topped with pistachio white chocolate ganachale and fresh straweberry.

More baking to come. Still need to try choux pastry in the new range cooker!

Highlights of summer 2024 part 2

Becoming a mother has been the most important event of 2024. But if you know me you know my passion for food is also very important. So one of the highlights of summer 2024 was finishing the new kitchen, as bébé decided to arrive while the kitchen was not finished yet...
Fantastic work from @bullandstag_bespoke ! I have a tons of picture of the new kitchen complete with pantry and dining area but I thought this one highlighting the bespoke wine and glasses cabinet is the one doing it best justice (and we see my so long desired range cooker!)
A visit from our dear @proton_cinzia and @antonioangelastro to meet bébé as well as a visit to Portobello beach with @celiabrammah so @kerryor91 could also see bébé were 2 good highlights of the summer.
Summer was also filled with lots of visits to local ice cream shop!
A family outing to @alnwickgarden with @chocosaurus__rex and @pamela.neal.51.
Another highlights was bébé fitting in her first pair of @vans with many more to come. Next pair courtesy of @angelfaceshopper 😘
Lots of outings in Morpeth with Milo.
We finished summer with the visit from my sister @astridpczo and her husband @moustier_benjamin. Visit of @alnwickcastleofficial and crazy golf for @chocosaurus__rex birthday. And last day of @astridpczo filled with sunshine in Amble.

Highlights of summer 2024 part 1

Becoming a mother has been the most important event of 2024. So summer was spent alternating between resting at home and taking bébé out with family.
1st picture is the first walk out of the house with @pamela.neal.51 (barring hospital visits...) 2 weeks after bébé was born, followed by the beautiful view our Amble harbour offers.
3rd picture is first proper family outing @chocosaurus__rex to @alnmouthartsfestival carrying bébé as she was still so small. Then learning to do walks the 4 of us with the pram around Milo's favourite spots in Amble.
Some of our outings during @muriel56100 and my dad's month holiday: Warkworth along the Coquet river, Amble at low tide, bird spotting at Hauxley nature reserve, Craster harbour and walking up to Dunstanburgh castle, Sunset on Amble harbour, Chillingham Castle, Housestead Roman Fort to see Hadrian's wall.
And finish with the paella my dad cooked!

The afternoon tea from @restaurantpine

We loved our visit there with @chocosaurus_rex at the end of January so as a birthday gift for me and my sister @astridpczo he treated us to an afternoon tea there so she could see first hand the talent of this newly awarded Michelin Star restaurant and experience the delights Northumberland has to offer.

I thoroughly enjoyed the egg filled with spring onions and potato mousse, and the roast garlic crumpet topped with North Sea crab, and as a chocolate enthusiast the dark chocolate "Pine cone" with its hazelnut praliné centre.
I was impressed with the brocoli and asparagus canelé (perfect texture!).
One of the best surprise was the apple marigold macaron with the elderberry jelly on top.

Well done @restaurantpine !

Long time no bake!
Working full time and having a puppy doesn't leave me much time to bake, or at least not as much as I used to.
But not having to go to work resulted in more time in the kitchen (to the delight of the said aforementioned puppy) so I baked a chocolate cheesecake and topped it with a homemade passion fruit coulis.

I have been dying to taste the cheesecake since yesterday but forgot how long the wait can be to really set in the fridge after the bake. And I forgot how little juice a passion fruit can give! I wanted to do a proper jelly layer on top but given the little amount collected, I opted for this thick coulis instead.
But overall I am pleased with the result!

After 1 year living in Amble, we finally got to try the local @jaspersbistro and we have not been disappointed! Very tasty cuisine, good produce, and friendly staff. We will defenetely come back again (with our fur ball!)

I had the pan fried garlic squid for starter, which reminded me a lot of the squid a la plancha I use to eat when back to the family village in Spain.

For the main I took the risk of taking the local Boullabaisse. Being from the South of France, I am always dubious when I see such a dish on menus as it will never be the same since some of the fish in a bouillabaisse are only found in the Mediterranean. But to my delight the whole dish was a success! Though different from the original, the soup itself was absolutely delicious, well seasonned with a distinctive taste of saffran. And the pieces of fish and seafood were a celebration of what is found locally. The surprise was finding a half Crab which I wasn't prepared for but took great pleasure in dismantling to get every last piece of crabmeat (under the fascinated eyes of @chocosaurus_rex ). Great idea to make the boullabaisse your own rather than making a pale copy of the classic Marseille institutional dish. Bravo!

I loved the little attention with the complimentary Valentines gift, this oyster shell with our names is going straight onto the best shelf in the living room ❤

This little soft stinky fur ball is 6 months today!
He has grown so much (3 months apart between last 2 pictures!), is learning every day and has really developed his own little personality. He is hard work but brings us so much joy! And he is the cutest 😍

We made it through January! To celebrate this (and also @chocosaurus_rex 1 year in his new job) we treated ourselves to an evening meal at a restaurant we have had our eye on for a few months now: Restaurant Pine. And it did not disappoint!
Located in the heart of Northumberland, we enjoyed the 16 course tasting menu which really showcase their talent, serving local produce (some from their garden) and also using preserves techniques. We were impressed with the quality and delighted with the tastes of all dishes. We will defenetely be back @restaurantpine

The highlights for me were:
- Sugar kelp dumpling with North Sea trout and soir cream (photo 2).
- Grilled langoustine, artichoke and blackened pear (photo 5). The delicacy of the langoustine with the intensity of that pear sauce was truly impressive.
- Beetroot, Dale End cheddar and preserved Walnuts (photo 5). Roasting the beetroot brought out its sweetness and it was deliciously paired with the strong taste of cheese in different textures.
- Fallow deer, roasted celeriac and pine (photo 7). I particularly loved the cooking of that piece of meat on the Hibachi to get that smokiness around yet keeping it rare in the middle and retaining the softness so you would cut in it like butter. Strong taste in that sausage which uses others parts of the deer, and what a jus of course! All that was balanced with the smoothest caramelised celeriac puree, and the acidity of the preserved pine.
- Parsnip parkin, Caramelised apple and hay ice cream (photo 9). Using the natural sweetness of the parsnip to make molasses and cooking parsnip in it is genius, and the spices from the parking itself were on point. The toasted hay ice cream was an interesting note on top of it.
- the nougat (I have high nougat standards) and the madeleine soaked in Hepple gin amongst the mignardises were to due for (photo 10)
- The view into the kitchen (photo 3).
- The stone to keep the wine cool (photo 3), and what a bottle it was! Excellent Riesling.
- The tableware, particularly the coaster (photo 4) and the sugar pot in the shape of an acorn (photo 10).
