Ribeye Steak with Fluffy Mash, Asparagus & Red Wine Reduction

Restaurant-style steak dinner at home. Juicy ribeye, the fluffiest buttery mash, tender asparagus and a rich red wine reduction… SO good!

Ribeye
• 1 ribeye steak
• salt & black pepper
• 1 tbsp oil • 2 tbsp butter • 2 garlic cloves • thyme or rosemary

Mash
• 2 large potatoes • 3 tbsp butter • ⅓ cup warm milk or cream • salt

Asparagus
• 1 bunch asparagus • 1 tbsp olive oil
• salt & pepper

Red wine reduction
• 1 cup red wine • ½ cup beef stock • 1 small shallot • 1 tbsp butter

Method

Boil the potatoes in salted water until tender. Drain, add butter and warm milk or cream and mash until smooth. Don’t skip this step — whip with a hand mixer until beautifully light and fluffy!

Season the steak and sear in a very hot pan for 3–4 minutes. Flip, add butter, garlic and herbs and baste for another 3–4 minutes, or until cooked to your liking. Rest for at least 5 minutes.

For the sauce, soften the shallot, add the red wine and reduce by half. Add the beef stock, simmer until slightly thickened, then stir in the butter.

Season and sauté the asparagus until tender with a little bite.

Serve everything together with plenty of that gorgeous red wine reduction.

I cooked everything using my @redchefuk RedChef Gemma Collection pans and they’ve been amazing to cook with — they heat beautifully and I love how they look in the kitchen too. Here’s the link

Save this one for your next steak night!
