🍋🍝 Too hot to spend ages in the kitchen? This one's for you.

Our Lemony Creamy Sauce for Pasta needs just six ingredients and about 15 minutes. Fresh cream is gently infused with garlic, then flavoured with lemon juice and zest for a sauce that's rich but refreshingly light. Toss it through linguine or tagliatelle, finish with Parmesan and serve it outdoors with a cold drink. Easy and delicious, just like summer should be. ☀️

INGREDIENTS
🔸 3 garlic cloves, crushed
🔸 350ml fresh cream
🔸 5ml (1 tsp) fine salt
🔸 2.5ml (½ tsp) grated lemon zest
🔸 45ml lemon juice (juice of 1 lemon)
🔸 Black pepper, to taste
🔸 Cooked linguine or tagliatelle, to serve
🔸 Grated Parmesan cheese, to serve (optional)

METHOD
Add the cream, salt and crushed garlic to a pot.
Heat over very low heat and allow to infuse, cooking until slightly thickened (about 10 minutes).
Slowly add the lemon juice and zest while stirring. Taste to make sure it's tangy enough for you.
Season with black pepper.
Toss through the cooked pasta and serve with plenty of grated Parmesan. 🧀

💡 Did you know? Hard, aged cheeses like Parmesan contain very little lactose. Most of it is drained off with the whey during cheesemaking, and what's left breaks down as the cheese ages. Parmesan is also a concentrated source of calcium and protein, so a generous sprinkle adds more than just flavour.

Save this for your next midweek dinner and tell us: linguine or tagliatelle? 👇

🧀 What’s actually in a serving of cheese? Let’s break it down for an average adult daily needs (70kg).

A single 40g serving gives you:
💪 14% of your daily protein, for strong muscles
🦴 30% of your daily calcium, for healthy bones and teeth
🛡️ 15% of your daily zinc, supporting your immune system and skin
👀 17% of your daily vitamin A, for your eyesight and immune system
⚡ Plus 12% vitamin B2, which supports metabolism and skin health
All that in one small serving. That’s what we call a nutritional overachiever. 😉

☀️ Summer snacking tip: Cheese is one of the easiest ways to add protein to a picnic spread or snack board. Pair it with crackers, fresh fruit or crunchy veggies for a snack that keeps you going through long, sunny afternoons. And don’t forget, 40g of cheese counts as one of your 3-a-Day dairy servings.

🍳☀️ Happy World Egg Day! Weekend brunch in the sunshine just got a serious upgrade.

Meet Turkish Eggs: soft poached eggs on a bed of cool, garlicky double-cream yoghurt, finished with a drizzle of sizzling smoked paprika and chilli butter. Creamy, smoky, a little bit spicy and ready in about 15 minutes. Grab some crusty bread for dipping and take it outside. 🌿

INGREDIENTS
Yoghurt base
🔸 1 cup double-cream yoghurt
🔸 1 garlic clove, grated
🔸 ½ tsp smoked paprika
🔸 ¼ tsp fine black pepper
🔸 ½ tsp garlic powder
🔸 ½ tsp ground cumin

Paprika butter
🔸 50g butter
🔸 1 tbsp smoked paprika
🔸 ¼ tsp chilli flakes
🔸 Salt and pepper, to taste

To serve
🔸 4 eggs
🔸 Crusty bread

METHOD
Mix all the yoghurt base ingredients together and spread onto a serving plate. Allow the yoghurt mix to come to room temperature
Poach the eggs in a pan of gently simmering water for 3 to 4 minutes, until the whites are set and the yolks are still runny. Lift out with a slotted spoon and place on top of the yoghurt.

Place the butter, smoked paprika, chilli flakes, salt and pepper in a small pot over low heat and allow to melt and infuse for a few minutes.

Drizzle the warm paprika butter over the eggs and serve immediately with crusty bread. 🍞

💡 Good to know: Yoghurt contains less lactose than milk, because the live cultures break down some of the lactose during fermentation. That's why many people with lactose intolerance can still enjoy yoghurt.

🥛⚠️Lactose intolerant? That doesn’t necessarily mean you have to cut out 🚫🐄 all dairy.

One of the biggest common misconceptions I hear is that lactose intolerance = no dairy at all. 🚫🧀

But it’s actually a little more nuanced than that. 🥛

Lactose is the natural sugar found in milk, and we need the enzyme lactase to break it down.

When you don’t produce enough lactase, lactose can travel undigested into the large intestine where it is fermented by gut bacteria 🦠 leading to symptoms like:

💨 Bloating
😣 Cramping
🚽 Diarrhoea
🎈 Gas

But here’s where fermented dairy differs⬇️ 🧀

During the fermentation process, lactose is enzymatically digested. . .

✅ Less lactose is left for your gut to deal with.

⚠️ And there’s another important factor: the amount of lactose that reaches your gut at one time really matters.

🥛 A big glass of milk delivers a relatively a large dose of lactose into your gut quite quickly. Rather have small amounts of milk with food to reduce the impact of lactose on the gut.

🥣 Yoghurt for example is thicker, digests more slowly and generally contains less lactose, giving your digestive system more opportunity to manage it.

Cheese is also a good option, it contains almost no lactose.

So having lactose intolerance doesn’t automatically mean saying goodbye to dairy. 🧀🥛🥣

It may simply mean learning which dairy products you tolerate, how much you can tolerate, and how you include them. Remember

➡️ Fermented dairy may be better tolerated.
➡️ Smaller portions may be better tolerated.
➡️ Having milk with food.
➡️ Hard cheeses naturally contain very little lactose.
➡️ Lactose-free dairy is another great option.

What dairy products work best for you with your lactose intolerance? ⬇️⬇️⬇️

🍞🔥 Braai season is back, and every good braai needs a proper pot bread.

This Amasi Pot Bread is soft and fluffy on the inside with a golden, crispy crust, and the secret ingredient is one you already love: amasi! It adds a gentle tang and helps give the bread its beautifully tender crumb. Serve it warm with butter alongside anything off the fire. 🧈

INGREDIENTS
🔸 8 cups cake flour
🔸 1 tsp salt
🔸 ⅓ cup white sugar
🔸 20g (2 packets) instant yeast
🔸 500ml (2 cups) amasi
🔸 500ml (2 cups) lukewarm water
🔸 Oil, for greasing
🔸 Melted butter, for brushing

METHOD
Preheat the oven to 180°C. In a large bowl, mix together the flour, yeast, sugar and salt.

Add the lukewarm water and mix until well combined. Add the amasi and continue to knead.

Turn the dough out onto a floured surface and knead for 20 to 25 minutes, until smooth and elastic.

Place the dough in a greased bowl, cover with a kitchen towel and leave in a warm spot for 30 to 40 minutes, until doubled in size.

Knock the dough down and transfer it to a cast iron pot lined with baking paper. Bake with the lid on for 30 minutes, then remove the lid and bake for another 30 minutes until the crust is golden and crispy. Brush with melted butter when there are 10 minutes of baking time left.

Allow to cool before slicing. 🍽️

Save this recipe for your next braai and tag the friend who always brings the bread 👇 Follow Rediscover Dairy for more local favourites.

Food is more than the sum of its individual nutrients.

When it comes to healthy eating, the whole diet matters.
When we look at a food, it’s tempting to focus on one nutrient. But foods are much more complex than that.
Milk and dairy contain a combination of protein, vitamins, minerals and other components that work together. Researchers call this the “dairy matrix.”

This unique combination can influence how the nutrients in dairy are digested, absorbed and used by our bodies, which is why researchers say we shouldn’t judge dairy’s effect on health by looking at its saturated fat content alone.
