NAGSASALITANG ULO It’s a pleasure to collaborate with artists who share my love for our local culture - Nagsasalitang Ulo encapsulates this fully, with Mich Dulce’s hats that draw from pre-colonial indigenous headwear and Santa Ana Gin’s drinks that highlight Filipino botanicals. For this show, I was able to execute the full experience I envisioned, from the thematic tablescape and floral arrangements that served as the canvas for the dishes, the cocktails that Santa Ana entrusted me to create, and finally, the three hors d’oeuvres that honor the theme - the Vakul Taro Fritter wrapped in kadaif and filled with Kurobuta pork and date reduction, inspired by the eponymous headdress worn by Ivatan women; the Katukong Upo Pie, inspired by a hat widely used by Filipino farmers, fashioned from dried upo; and the Cacao de Pili Moron, vanilla and chocolate-infused kakanin topped with cocoa-dusted pili nuts, reminiscent of the Biri rock formations in Samar. Thank you to everyone who dropped by and supported this labor of love and thank you to the people behind it, including Casa Luisa who provided the other delicious appetizers throughout the night and to Reine So for creating the beautiful ceramics that accentuated my dishes - every single one of you played a huge part in executing my vision, from start to finish. Congratulations to Mich Dulce on her exquisite collection of hats and a big thank you for making Casa Luisa and Santa Ana as part of experiencing the Philippines in our own individual disciplines and creative expression.
