If you’re hosting or attending gatherings this weekend, this easy Lemon Miso Hummus is exactly what you want on the menu. It’s quick to make, loaded with plant-based protein and fiber, and friendly for most diets, plus it’s eye-catching and feels special. You’ll want to come back to this healthy summer appetizer again and again all season long.

I’m excited to be teaming up with @misomaster to bring you a series of three recipes, all of which will celebrate the complex, savory flavor of miso. Adding their Chickpea Miso into hummus is a simple way to boost the umami flavor, yielding a hummus that feels more unique and satisfying. Miso, a fermented food, is also rich in gut-healthy probiotics.

➡️ RECIPE
For the Hummus:
- Two 15-oz cans of chickpeas, drained and rinsed
- ½ c tahini
- ¼ c Miso Master Chickpea Miso
- Juice of a lemon
- ½ tsp salt
- Drizzle of olive oil or water as needed

For Garnishing:
- 6-8 artichoke hearts
- ¼ c assorted olives
- Sprig of fresh basil
- Several sprigs of fresh dill
- Drizzle of olive oil
- Freshly-ground pepper

Directions:
1. In a food processor, combine the chickpeas, tahini, miso, lemon juice, and salt. Process for several minutes until smooth, scraping down the sides as needed. If you have trouble getting a smooth hummus, add a splash of olive oil or water and re-process.
2. Taste and adjust the miso, lemon, and salt as desired.
3. Transfer the hummus to a serving bowl.
4. Top the hummus with artichoke hearts, olives, basil, and dill. Finish it with a small drizzle of olive oil and freshly-ground black pepper.

Make-Ahead Tips
Make the hummus up to two days ahead of time and store it in the fridge in a tightly sealed container. When ready to serve, transfer the hummus to a serving bowl and garnish.

We often get asked the question: if you cook with Miso won’t you kill the probiotic content?

Short answer: mostly yes

Long answer: Miso still adds an amazing complex umami flavor to any dish even if the beneficial bacteria is cooked off. In addition to gut health, another important plus to fermented foods is that the fermentation process makes nutrients more bioavailable. So, Miso is a simple yet powerful way to add flavor to any dish, replacing other sauces or ingredients you may want to avoid in your diet.

Pro tip: add the miso at the end of cooking where the heat is off or low. This can help maintain the living quality of the Miso.

Super easy Miso Salmon Glaze recipe. 

• Tbsp Miso Master Mellow White Miso
• Garlic
• Olive Oil
• Squeezed half lemon

Whisk then paint on Salmon. 

This is a great starting point. You can add any herbs or other ingredients you want. Use this on any protein for an umami bomb!

This Caesar hits every texture.

Creamy cashew Caesar, crispy sheet-pan mushrooms, crunchy lentils for protein, and just enough golden sourdough croutons for bite. 
Bright, savory, and deeply satisfying.

Plant-Based Caesar with Crispy Mushrooms & Lentils

Ingredients
Creamy Caesar Dressing
½ cup raw cashews (soaked 20 min in hot water)
¼ cup unsweetened @oatly oat milk
2 tbsp fresh lemon juice
1 tsp @greypoupon_us Dijon mustard
1 small garlic clove
1 tbsp @bragg nutritional yeast
1 tsp @misomaster white miso paste
1 tbsp @pompeian olive oil
½ tsp @butternutmountainfarm maple syrup
¼ tsp @labaleineusa sea salt
freshly cracked black pepper

Crispy Sheet-Pan Mushrooms
8 oz white mushrooms, sliced
2 tbsp @sanjtamari tamari
1 tbsp olive oil
pinch sea salt
pinch @mortonbassettspices smoked paprika

Crispy Lentils 
½ cup @bobsredmill cooked lentils, well drained
1 tsp olive oil
pinch sea salt
pinch garlic powder

Sourdough Croutons
½ cup sourdough bread, torn into rustic chunks
1 tsp olive oil
½ small garlic clove, grated
pinch sea salt

Salad & Garnish
2–3 hearts romaine lettuce, chopped or halved lengthwise
Grilled lemons 

Instructions:
1️⃣ Crisp the lentils
Preheat oven to 400°F.
Toss lentils with olive oil, garlic powder, and salt.
Spread on a small baking tray and roast 12–15 minutes until lightly crisp.
2️⃣ Roast the mushrooms
Toss mushrooms with olive oil, tamari, salt, and smoked paprika.
Spread in a single layer on a sheet pan so they aren’t crowded.
Roast 15–18 minutes, stirring once, until deeply browned and crispy at the edges.
3️⃣ Make the sourdough croutons
Toss sourdough pieces with olive oil, grated garlic, and salt.
Bake 8–10 minutes until golden and crunchy.
4️⃣ Blend the Caesar dressing
Drain cashews and blend in the @vitamix with oat milk, lemon juice, Dijon, garlic, nutritional yeast, miso, olive oil, maple syrup, salt, and pepper until completely smooth and creamy.
5️⃣ Assemble
Arrange romaine on a large platter.
Drizzle with Caesar dressing.
Top with crispy mushrooms, roasted lentils, and sourdough croutons.
