Still a little surreal… the book I co-authored is still selling online🍷📖 When we created Japanese Dishes for Wine Lovers, the idea felt almost niche at the time. Japanese food wasn’t commonly linked to wine, which is exactly what made the project exciting. Japanese cuisine is all about balance, texture, and subtlety, and those same qualities can make for some of the most interesting wine pairings out there. From umami-rich miso to delicate raw fish, there’s a whole spectrum of flavors that work beautifully with everything from crisp whites to structured reds, even a touch of sweetness when it fits. Pairing isn’t about rules like “red with meat, white with fish.” It’s about harmony, contrast, and sometimes a bit of surprise. In the book, we explored how classic Japanese ingredients like soy sauce, ginger, mirin, saké, and sesame interact with different wine styles, alongside more than 50 contemporary dishes created by Machiko Chiba. Think tuna tataki with wasabi, spicy miso-simmered fish, octopus with citrus sesame, or daikon gyoza, each with a wine pairing to match. Looking back, it feels like we were just a little ahead of the curve. And it’s genuinely rewarding to see more people discovering that Japanese food and wine are not an odd couple at all — they’re a seriously exciting one! by @reflectiontokyo
