Plum & Pear Glazed Pork Belly 😍

The fourth jam in the @bonnemaman_us calendar was Plum, Pear, Star Anise.

Once I tasted it I knew it was destined to grace a succulent bite of pork belly and when I’m right, I’m right y’all. Sweet, savory, tangy. This was so good we had a little tussle over me eating the last pieces. 😂

Run to H Mart and get you some pork belly right now.

Of course if you don’t have this exact jam you can sub what you DO have, and that goes for all these recipes. Get creative and delicious with me!

*PS: clearly I eyeballed the seasonings here so these are approximate. Just sprinkle till your ancestors stay stop.

RECIPE:
12oz pork belly strip, thick cut
1/2 tablespoon kosher salt
1/2 tablespoon ground black pepper
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
1 tablespoon (.5oz) rice vinegar
1 tablespoon (.5oz) dry sherry
2 tablespoon (1oz) plum jam
Garnish: roasted sesame seeds, green onion

INSTRUCTIONS:
-Preheat oven to 400°F
-Season pork belly with salt, black pepper, garlic powder, and smoked paprika. Thoroughly rub seasonings into the meat.
-Place on a sheet pan lined with parchment paper and roast for 45-50 minutes
-In a large bowl, whisk together plum jam, rice vinegar, and dry sherry
-When fully cooked, remove pork belly from oven, place it on a cutting board, and discard used parchment paper
-Set oven to broil
-Line sheet pan with a fresh piece of parchment paper and set aside
-Slice pork belly into cubes then add them to your bowl and toss in jam glaze until coated
-Spread onto prepared sheet pan and broil 1-2 minutes
-Garnish with sesame seeds and green onion

Bleu Cheese Crusted Ribeye With Fig Cardamom Jam Sauce

Back like I never left to drop the rest of my #OnlyJams recipes! 🙈😂

I mean, most jam is made from summer fruits anyway so really I’m right on time 😉

We left off on number two, Fig Cardamom, and I have to say this is one of the best ways I’ve ever incorporated jam into a recipe.

Simmered into a silky pan sauce that gets drizzled over a bleu cheese crusted steak? Yes.

Thank you to my wifey taste tester extraordinaire @tinabelike

And of course @bonnemaman_us for making the calendar and jams of my dreams ☺️

RECIPE:
1 - 16 oz, 1inch thick ribeye
Kosher salt
Black pepper
2 tablespoons (1 oz) unsalted butter
1 clove garlic, smashed
1 sprig fresh rosemary
~2 tablespoons (1oz) soft bleu cheese
3 tablespoons (1.5oz) dry sherry
3 tablespoons (1.5oz) beef broth
2 tablespoons (1 oz) fig cardamom jam

INSTRUCTIONS:
-Generously salt ribeye on all sides. Place uncovered on a wire rack with a sheet pan underneath in the refrigerator to dry brine for at least one, or up to 48 hours
-Rest steak at room temperature for 30 minutes before cooking
-Season with fresh ground black pepper on all sides
-Place a cast iron skillet over high heat and add a tablespoon of canola oil
-Sear for 2 minutes on the first side and do NOT move it so a beautiful crust will form
-Sear each edge of the steak for 30 seconds, then flip and sear the second side for 2 minutes
-Lower the heat to medium, and add 2 tablespoons butter, a crushed clove of garlic, and sprig of fresh rosemary to the pan
-Tilt the pan and spoon the herbed butter over the steak for 1 more minute
-Remove from heat and set steak on a sheet pan lined with aluminum foil
-Crumble bleu cheese over the top of the steak and place under the broiler for one minute or just until melted
-Set aside to rest
-Place the same skillet over medium heat and pour in dry sherry to deglaze the pan, scraping the bottom as you go
-Stir in beef broth and fig cardamom jam and simmer for 1-2 minutes until sauce is combined, smooth and silky
-Slice your ribeye, drizzle with the pan sauce, and enjoy!

🎶 It’s tiiiiiime 🎶

Jam time, to be specific! ☺️ I got my hands on the @bonnemaman_us advent calendar for the third year in a row, and am dropping a flavor reveal in my stories every single day of the season.

I call the series Only Jams cause…well, I like to flirt as much as I like delightful little jars of jam😇

I also put the jam in and on delicious things and share those ideas. Previously this all went down exclusively in my stories but I’ve been encouraged to do a little more this time, so this video is the first of hopefully many to come.

Tap in to see my seasonal take on a whisky smash that I’m calling the Bonne Maman Blueberry Smash, inspired by the first jam in the 2025 calendar!

Exactly one year ago today I set off on an epic, life altering adventure with my dear friend Lizz to
Walk the 500 mile long French route of the Camino de Santiago.

Just days after my Grandmother’s funeral and three months into grieving my mother, still completely in shock but feeling called to move and push myself far beyond my physical surroundings of loss I said sure..why not? Lets go climb a mountain in France the walk all the way to and across Spain? Lol whaaaat?

When Lizz asked me to join her It was the most confusing, terrifying, surrendered “yes” I’d ever said. And one of the most important. A year later I’m still in awe of the experience and sitting with the lessons and healing that unfolded.

I took so, so ,SO many videos of the journey and lots of you who followed along day by day in my stories asked if i’d be doing anything with them. For now I’ve landed on making them into reels to share here, reflect and reminisce.

So today, here’s to the anniversary of our first brave steps, 4.7 miles & 2,191 ft of elevation, and the confirmation that cheese in France is on a whole different level. by @reneicespieces

Officially caught in my first getty image singing with Ledisi at the Grammy Hall of Fame Gala! 🤭😍

Ledisi performed “How I Got Over” by Clara Ward, one of the highest grossing gospel songs of all time, to celebrate its induction into the hall of fame. They tapped @uscgospelchoir to provide singers to support, and I was honored to be asked to offer my voice for the occasion with this group of phenomenal, dynamic musicians.

It was a beautiful, joyous experience and I’m not gonna lie, when they turned up the house lights and I saw John Legend and Jon Batiste on their feet beaming, dancing, clapping and recording I smiled so big my cheeks hurt. 😱😂

I’ve been quietly returning to music & performance as I get my feet back under me, and this moment felt like big affirmation to keep going.

Many thanks to @marcusdesir for bringing us all together. 💜 What a night ☺️ by @reneicespieces

I have a YEAR long backlog of life to share here but the desire & capacity haven’t synced up till now.

Probably has something to do with getting 10 days to release & be wrapped in love in the desert.

More on that soon ☺️, but today I’m excited to drop these moments from running around playing faeries and feeling my inner child soar over the weekend.

I’ve been working gently and diligently to take care of her this year. It is the work of my grief. Thankfully, some days it looks like pure joy.

Thank you for setting up this play day @lablackqfemmes @lacuddleclub , and a BIG BIG thank you to @quietgrump for answering a last minute call to do my fairy face 🧚🏾‍♀️ taken in Renaissance Pleasure Faire by @reneicespieces

I don’t exactly know why, but somewhere in my tween years I developed the belief that if someone takes your photo while walking behind you, it means they really adore you.

I’ve quietly held those photos and their photographers dearest over the years. Usually I keep them to myself like little treasures but these are just too gorgeous and full of love to keep tucked away.

Candid moments from my time of sorrow and pink hair.

I am delighted to be seen and loved by you. 💗 by @reneicespieces

Still beaming from my birthday party and being wrapped in a force field of love so strong it had me glowing like the sun.

Thank you for the smiles, giggles, flowers, dances, kisses, flirtation, songs, cakes, joy, love, and pleasure. And for capturing my essence so authentically.

I can’t wait to spend the next year doing more of the same with all the brilliant souls I have the honor of knowing and loving in this lifetime. 💜 by @reneicespieces

Still beaming from an incredible inner child play day with @iseeyousirlex at the happiest place on earth ☺️

I hadn’t been to disneyland in 10 years and wow, we laughed screamed (a LOT), had some much needed release, stopped at all the photo spots and walked nine miles 😱.

Somebody please put us in your 90s throwback catalog! 😂 We are simply too cute. by @reneicespieces

For the past 9 months I’ve tried to say yes to joy as often as I can. Even and especially when it would be easier to say no.

This is not to say I’ve been ignoring my grief. even if that were possible for me, I’d never do it. It is sacred. But, I am learning how to ask it to co-exist. To hold hands with other emotions and walk together for a little while.

Every day that we move closer to the holidays, this practice has become more difficult. It’s three months of firsts that I don’t want to experience. First Thanksgiving, birthday, Christmas, New Year’s without her. Then the anniversary of her passing, right in a row. And my body knows it. Plus the remembering of the pain of those days last year.

So im slowing down, but still saying yes to joy and grateful for every moment that I get to do so, and every friend that has extended an offer that allows me to access joy in their presence.

Im going to share some of those moments in the days and weeks that come to help me get through. And keep saying yes when it feels aligned to. Remembering there are times for tears, and laughter too. And the lines between them are thin. And that is such a gift. by @reneicespieces
