✨🏆 Huge congratulations to our very own Chef Julius for winning Local Food Hero of the Year 2025!

We couldn’t have done this without the incredible support of our loyal customers who’ve been with us since day one 🧡

This year, Republic of Grill was nominated under 10 categories, and that’s all thanks to YOU, our community, who continue to believe in what we do. 🙌

A massive shoutout to our fantastic team whose passion, dedication, and hard work bring this vision to life every single day.

We are truly beyond grateful. This one is for all of us. 🌟

Thank you to everyone who joined us for yesterday’s food demonstration as part of the @limerickfestivalsandevents Linger Food Festival.

Chef Julius took you through our birria tacos, from the slow-cooked beef to the rich consommé, using a blend of dried Mexican chillies, toasted spices and aromatics to build that deep, smoky flavour.

We hope you picked up a few tips along the way and enjoyed seeing how we make one of our signature dishes.

We headed down to the Costa del Limerick and found a couple of hungry luchadors. Had to drop them some ROG burritos to keep them fuelled. 🌯
