We are beyond proud to share that Danny has been awarded One Knife at The Best Chef Awards 2025 in Milan.

To stand alongside legends, icons, and the most inspiring chefs in the world was an experience we will never forget. Bringing this award back to Bullaun is an incredible privilege for our small restaurant in the west of Ireland.

This recognition is a huge honour for Danny, and we couldn’t be prouder to see his talent celebrated on a global stage. At the same time, this achievement reflects the dedication of our entire team, their commitment and passion define Lignum.

Words can’t fully express the emotions we’re feeling right now. This journey has been one of passion, perseverance and a lot of hard work.

The Overnight Experience

An evening at Lignum, a night at Ryan’s Lodges.

In collaboration with our neighbours at Ryan’s Lodges, we’ve created an overnight experience for two.

Your experience includes:
— An overnight stay for two at Ryan’s Lodges
— Our 10 course Tasting Menu for two at Lignum
— Return taxi transfers between the lodges and Lignum
— A welcome drink at Ryan’s Lodges
— A breakfast box to enjoy at the lodges the following morning

* Previous experience in a similar role within a high-level kitchen. [This is essential]
* The confidence and ability to manage their own section independently
* Care and precision in every aspect of their work
* A genuine enthusiasm for their craft and a professional approach

We’re closing our doors for a short while.

For the past year, we’ve been quietly working away on plans for the next phase of Lignum, and the time has finally come to get started.

Over the coming weeks, the restaurant will undergo a significant transformation. While the heart of Lignum will remain the same, we’re excited to create a space that reflects where we are today and where we hope to go in the future.

Lignum has always evolved naturally, and this feels like the right time to invest in the space and shape the next chapter of the restaurant.

We’ll be sharing the journey along the way and look forward to welcoming you back when we reopen in mid-July.

LIGИUM SPRING / SUMMER 2026 STAGIAIRE PROGRAMME

Applications are now open for our 10-week stagiaire programme (approx. 2.5 months) at Lignum for chefs who want to deepen their understanding of seasonal, ingredient-led cooking.

The programme is designed to give a full picture of how we work with ingredients from the ground up.

-1 day per week in the garden learning from our Head Gardener and gaining insight into the produce that shapes our menus.
 -3 days per week in the kitchen working alongside the team and learning our approach to cooking with fire and seasonality.

We provide: • Accommodation • Team Meals • Use of a staff car (for those with a valid driving licence)

We’re incredibly proud to announce that we have retained our Michelin star ⭐️

Being awarded our star last year was a moment we’ll never forget, and holding onto it for the first time feels especially meaningful.

It’s been an exceptional year, and we’re deeply grateful to our team who give everything, to our growers and producers, and to @michelinguide for this continued recognition.

Celebrating this moment in Ireland for the very first time made it all the more special.
