Huge shout out to @chicago_plays_piano for the invite to paint a donated piano! Had a really fun time painting this to be installed at @navypierchicago - you may have heard of that venue. It’s tuned and completely playable on site! John is a passionate individual with a love for music and has taken this project in individually and does all the leg work seeking artists, funding and relocating these functional pieces of art. Not many people out there like John. The final episode of the Mexico City season of Eatiots is now live, as the season comes to an end, I cant tell you how thankful I am that I get to do this and get to share my adventures with you, I feel like indiana jones sometimes, but the treasures I’m finding are experiences, and people, creatives of all walks of life, chefs, artisans, graff writers, tatooers, designers, podcasters, internetainerprenuers man!!! Just people making it fkn work, but that work that don’t feel like work. Anyway, thank you to my co-hosts @revisecmw @omens_msk, our videographers/editors @shotguts & @bryandou, our Driver Manolo, and of course @opticgaming and the World Famous #GreenWall

I ate a dumpling last week that tasted like a Chicago hot dog joint had a baby with mandu. That’s Kimski. And they just turned ten.

Won Kim opened a food counter in the back of Maria’s Packaged Goods on 31st Street in Bridgeport ten years ago. No investors, no pitch deck, no fanfare. A Korean chef with a Polish sausage and something to prove. A decade later, he’s still there. And the menu just got better.

🎉NEW: Jja Jjang Ramyun made with fresh @akahoshiramen noodles. That fermented black bean sauce is dark, glossy, and thick. Roasted earthiness upfront, slow caramelized sweetness on the finish. The Akahoshi noodles hold the weight without flinching. Crisp cucumber, pickled daikon, fried shallots on top…every slurp gets better.

🎉NEW: Chicago-Style Dumplings. Ground beef and pork, giardiniera, caramelized onions, cheese sauce, pickled mustard seeds. The bottom crust shatters. The filling tastes like a gourmet smash burger folded into a wrapper. The giardiniera cuts through everything and wakes your whole mouth up. The pickled mustard seeds pop like little vinegary grenades. It’s Chicago inside of a dumpling wrapper.

Won is a DJ, a graffiti artist, and one of the most important chefs this city has ever produced. He turned Kimski into a launchpad for the next generation of Chicago chefs who don’t fit the white-tablecloth world. He feeds the neighborhood, literally. He IS Chicago’s jjanjangmyeon.

Ten years on 31st Street. Still a window/doorway in a bar. Still one of my favorite spots to eat at.

1:30 to recap 72 hours for our 10 year anniversary party. Started off at @alright.alright.chicago @pennywhistletavern playing pre party vibes with @kosmo_dj_official and @b._all_right which was one of the funnest parties I’ve played in a while.
