@wingnoodles, 2025

Wing Noodles Ltd. was a legendary pillar of Montreal’s Chinatown that operated for 128 years before closing its historic Rue de la Gauchetière factory in late 2025. Founded in 1897 by Chinese immigrant Hee Chong Lee, the business evolved from a dry goods importer into Quebec’s largest manufacturer of Asian noodles and cookies, famously pioneering the world’s first bilingual English-French fortune cookies. In its final decades, the company was operated by third-generation brothers Garnet and Gilbert Lee, who grew up playing on the factory floor before spending over 50 years managing its operations. In addition to producing beloved food staples, Wing’s served as a crucial economic and social anchor for Montreal’s Chinese community, providing vital employment for waves of new immigrants and funding key institutions like the Montreal Chinese Hospital. The company’s vast corporate archives—which include a detailed ledger of nearly every Chinese restaurant to operate across Quebec—now serve as an irreplaceable historical record of early Chinese settlement, ensuring the family’s legacy remains deeply woven into the cultural fabric of Montreal.

This series of pictures was made in collaboration with the @jiafoundationmtl during the final days of production.

This Sunday August 23rd at @memmtl, curator and filmmaker Karen Cho will reflect on the process of transforming nearly 130 years of history into the living exhibition Wing Noodles – The Heart of Chinatown, as well as the process of capturing the company’s final weeks of production and legacy in a forthcoming documentary film. 'For generations, @wingnoodles stood as a symbol of continuity in a neighbourhood shaped by constant change. Its landmark buildings stand within the heritage designated “institutional core” of the district, a block containing some of Chinatown’s richest heritage buildings, home to the longest standing institutional and community organizations, and holding significant potential for Chinatown’s future.

Today, as the Wing’s Block stands at the intersection of memory and possibility with Wing Noodles’ departure, Chinatown needs a clear vision to turn a potential crisis of uncertainty into an opportunity. To meet the end of this chapter for Chinatown, the @jiafoundationmtl launched the Wing’s Conservation Strategy, a two-part strategy that seeks to preserve and promote the legacy of Wing Noodles in our neighbourhood.'
