It’s pretty much guaranteed that you’ll always find @ridiculouslygoodsalsa in our fridge! We stock up on it regularly at the @worthingtonfarmersmarket. It’s great just for chips and salsa, mixing it up in a queso dip, on top of protein bowls. And if we do have any left over, we love blending it into chili.

They whip up four regular flavors:
🍅 Mellow
🍅 Happy Medi-Yum (my personal fav)
🍅 Hi Heat
🥒 Pickle Salsa (a surprise hit!)

In addition to the farmers market, you can find them at local stores like @weilands_market, @thehillsmarket, @littletonsmarket, plus Whole Foods and Giant Eagle Market Districts - as well as a number of stores in the Cleveland area! taken in Columbus, Ohio by @ridiculouslygoodsalsa

This Lazy Girl Chicken Enchilada Casserole is one of those easy, crowd-pleasing dinners that comes together FAST. No rolling individual tortillas, no complicated layering, just mix everything in a bowl, throw it in a casserole dish and bake!

It’s packed with fresh flavor thanks to the Ridiculously Good Salsa I see as the base. @ridiculouslygoodsalsa is fresh salsa made right here in Columbus, Ohio with clean, quality ingredients. You can find it online at ridiculouslygoodsalsa.com or at select Columbus, Ohio local grocery stores in the refrigerated dip section.

Here’s what you need:
CHICKEN ENCHILADA CASSEROLE
• ½ cup light sour cream
• 1 container Ridiculously Good Salsa
• 2 Tbsp Ridiculously Good Taco Seasoning
• 6 low-carb or regular tortillas, cut into 1-inch chunks
• 4 cups cooked chicken, diced or shredded
• 2 cups shredded Mexican cheese blend, divided

In a large bowl, whisk together the sour cream, salsa + taco seasoning. Stir in the tortilla pieces, cooked chicken + 1½ cups of the shredded cheese. Spread into a greased 13x9-inch baking dish. Top with the remaining ½ cup cheese. Bake at 400°F for 20–30 minutes, until hot and bubbly and the cheese is melted. Top with cilantro if you want and serve with extra Ridiculously Good Salsa.

It’s cheesy, flavorful, packed with protein and SO much easier than making traditional enchiladas.

SAVE this for your next easy dinner and follow me for more healthy recipes.

Thank you @thedublinmarket and @worthingtonfarmersmarket for championing Columbus small business. This summer was a challenge for all vendors. Given our entrepreneurial spirit and "can do" attitude we made it work with rain, wind, and more rain. ☔️⛈️🌈

We are grateful to all of our salsa fans for returning week after week to grab salsa. You waited in the rain and we loved seeing your happy, but wet faces. 😊 We do it for you and we ❤️ it.

To my small but mighty staff - thank you from the bottom of my heart. Isabelle, Mary, Lindsay, and Will. Could not do this without you! You embody the RGS vibe and that's why this all works! Love and gratitude to all. We can't wait to see you soon! 🤩❤️😘 by @ridiculouslygoodsalsa

If buffalo chicken dip and taco night had a baby the result would be this Southwest Chicken Dip! It has all the creamy, cheesy goodness you want in a party dip, but instead of hot sauce + ranch, this one gets its flavor from Ridiculously Good Salsa + taco seasoning. It takes just a handful of ingredients and comes together SO easily.

@ridiculouslygoodsalsa is fresh salsa made right here in Columbus, Ohio with clean, quality ingredients. You can find it online at ridiculouslygoodsalsa.com or at select Columbus, Ohio local grocery stores in the refrigerated dip section.

Southwest Chicken Dip
• 8 oz cream cheese
• 1 container Ridiculously Good Salsa (any heat level)
• 2 cups shredded cooked chicken
• 2 Tbsp Ridiculously Good Taco Seasoning
• 2½ cups shredded cheddar cheese, divided

Mix everything except ½ cup of the cheese. Spread into a greased baking dish, top with the remaining cheese and bake at 425°F for 15–20 minutes, until golden and bubbly.
(Party tip: Throw everything into a slow cooker instead and keep it warm for easy serving!) Serve with tortilla chips and watch it disappear.

Save this recipe for your next game day, party or taco night!

This might be my new favorite weeknight chili shortcut because using prepared salsa makes this SO easy to throw together without sacrificing that fresh, homemade flavor. Instead of chopping onions, garlic, cilantro and tomatoes, I just grab a container of @ridiculouslygoodsalsa and let their fresh, clean-ingredient salsa do all the work.

And because it’s refrigerated fresh salsa, it adds so much flavor to the chili without making this feel like a shortcut meal. Just brown the beef, dump everything in, simmer and dinner is done!

Ridiculously Good Salsa is made right here in Columbus, Ohio with clean, quality ingredients. You can find it online at ridiculouslygoodsalsa.com or at select Columbus, Ohio local grocery stores in the refrigerated dip section.

EASY WEEKNIGHT CHILI
• 1 Tbsp olive oil
• 1 lb ground beef
• 1 container Ridiculously Good Salsa — any heat level
• 4 cups beef broth
• 1 can kidney beans, drained
• 1 (6 oz) can tomato paste
• ¼ cup sugar or monk fruit sweetener
• 2 Tbsp Ridiculously Good Chili Seasoning

Heat the olive oil in a large pot. Add the ground beef and cook, breaking it up as it browns. Add the salsa, beef broth, kidney beans, tomato paste, sweetener and chili seasoning. Stir everything together and bring to a simmer. Simmer for at least 10 minutes before serving. I like to let mine go a little longer so all those flavors have time to come together.

Save this for your next busy weeknightand follow me for easy and healthy yet delicious recipes.

You can do things the hard way and chop all the ingredients for your soups and chilis by hand, or you can do it the easy way and add a container of @ridiculouslygoodsalsa to your dishes saving yourself all the work of chopping.

Using prepared salsa makes this Slow Cooker Chicken Tortilla Soup a breeze to throw together without sacrificing flavor. Find this top-quality fresh salsa online at ridiculouslygoodsalsa.com

What you need for the soup:
* 6 cups chicken broth
* 1 (6 oz) can tomato paste
* 1 (15 oz) can black beans, rinsed and drained
* 1 (15 oz) can corn, drained
* 2 Tablespoons Ridiculously Good Salsa Chili Seasoning
* 1 Tablespoon sugar or monk fruit sweetener
* 3 boneless skinless chicken breasts
* desired toppings such as: sour cream, sliced avocado, hot sauce, sliced jalapenos, chopped onion, shredded cheese and/or chopped cilantro

Add all the ingredients to a slow cooker, stirring to combine. Cook on low for 8 hours or high for 4 hours. Then, remove the chicken and shred it using 2 forks. Return the chicken to the pot and give everything a good stir. Then serve, or keep the slow cooker on warm up to 3 hours until serving with your favorite toppings.

These Sweet & Spicy Poppers are a MUST-make for football season! I used both jalapeños and baby sweet peppers so there’s something for everyone whether you like a little kick or prefer things on the sweeter side.

The not-so-secret ingredient is @ridiculouslygoodsalsa Sweet Heat Dip. It adds just the right amount of sweet & heat to make these poppers irresistible!

Here’s what you need:
•Jalapeños and/ or baby sweet peppers
•Ridiculously Good Salsa Sweet Heat Dip
•Bacon

Preheat oven to 425°F. Slice the peppers in half lengthwise and remove the seeds. Slice the bacon into thirds. Fill each pepper half with Sweet Heat Dip. Wrap each pepper with a piece of bacon (securing with a toothpick if desired, but I didn’t bother.) Place the bacon-wrapped peppers directly on a baking sheet or on a rack set over a baking pan. Bake for 20–25 minutes, or until the bacon is cooked through and crispy to your liking. Let them cool for a few minutes (if you can resist!) and enjoy!

You can find Ridiculously Good Salsa products online at ridiculouslygoodsalsa.com, as well as in select stores and local farmers markets here in Columbus, Ohio.

Save this one for your next game day, party or backyard gathering and don’t be surprised if you need to make a double batch.
