Pre @biggrillfestival dish testing in @kalderodublin with boss man @andynoonan - their pigs head taco with salted duck egg could well land them a "best dish" award for the second year running. Stupidly good.

Always so impressed to see how much @riggzcastillo is pushing what they're putting out - modern Filipino food, with the best Irish ingredients you can get, all cooked with deep respect, knowledge and passion from both him and @axel_z ❤️

Hard to put into words the feeling we all had reading @realconorstevens ‘s heartwarming review today, so maybe instead just a short reflection on what it means to see the entire team’s diligence, hard work, care & creative expression showcased and spoke about like this. It’s a wonderful thing to be able to do your own thing, showcase your own food & tell your own story, one that we’re very aware we have the huge privilege to be able to do… but it’s another wonderful thing entirely for that to be seen, understood and acknowledged in this way, and are so grateful that Conor saw who we are, what we do, and decided to do what he’s excellent at, and tell a bit about our story and his experience with us at Kaldero, with his truly wonderful way with words.

We’re using wonderful a lot, yes, but only because that’s how this feels. It’s the first review of 2026, it’s titled a Love Letter - Kaldero, and it’s absolutely wonderful. GRMA & salamat @realconorstevens @totallydublin 🇵🇭🤝🇮🇪

Welcome @chez_spice to @kalderodublin 🌶️

Friday and Saturday nights are now home to @chez_spice. A late night buzz featuring resident and guest dj’s on a weekly basis. A new space to come and dance to quality house music and beyond.. no door charge

We’re having a little launch party this Friday to celebrate. Come down and check it out

Very excited for the next episode of @behindthepasspodcast this Monday with @bahay_dub.

I’ve had the pleasure of knowing @axel_z & @riggzcastillo for years, and watching Bahay grow from an idea to a popup to a party series to a book to countless tv appearances and now taking over the kitchen in @kalderodublin to huge critical acclaim is nothing short of incredible.

Richie and Alex are smart, compassionate and supremely talented, and are heading up a new generation of Irish cooks, all for the right reasons.

Feeling honoured to have been asked to capture this moment in time for the brilliant Alex and @riggzcastillo of Bahay as they step into their next chapter with Kaldero on St Stephen’s Green.

A few months ago, I got a call from @axel_z about this exciting new opening, and it meant so much. I’ve been with them since the very beginning of their journey. Beyond our professional relationship, they are friends.
They even cooked at my own wedding, so this milestone feels especially close to my heart. Watching them grow from pop-ups and food trucks to launching the first fully-fledged Irish-Filipino restaurant in Dublin has been incredible.

It’s been amazing to see Kaldero getting the recognition it deserves, including the fantastic article that came out today in the @independent.weekend written by the incredible @katymcguinness . Such a honest story of their journey. Go and get yourself a copy, read and be inspired!

Took a few days for the dushst to settle on that one…

What a magical and inspiring weekend down at @openearfest, it truly is something special! The work and passion that the whole crew put into everything can really be felt.

Getting to cook for everyone and celebrate my 30th by playing till the early hours of Saturday morning is something I won’t ever forget 🥲

Always a special weekend down at @openearfest. This year I have the privilege and honour to be taking everyone through to the early hours of Saturday morning 🌞 I shall also be turning 30 which makes it even more special!
