Creamy yogurt, fresh herbs and a generous drizzle of RIO LARGO EVOO - this is proof that simple ingredients can make something seriously delicious. Try this Yogurt and Olive Oil Dip!

Ingredients:
1 cup thick plain yogurt
2 Tbsp RIO LARGO EVOO, plus extra for topping
Pinch of salt
Fresh herbs such as mint, dill or parsley

Method:
Mix the yogurt with RIO LARGO EVOO, salt and chopped herbs. Spoon into a serving bowl and finish with another generous drizzle of EVOO.

Serve with crusty bread, pita or crisp vegetables.

A tray of colourful vegetables, a little seasoning and a generous drizzle of RIO LARGO EVOO - sometimes that’s all you need for a delicious side dish.

Ingredients:
1 red pepper, chopped
1 zucchini, sliced
1 small aubergine, cubed
1 red onion, cut into wedges
4 Tbsp RIO LARGO EVOO
Salt, pepper and dried oregano

Method:
Preheat oven to 200 °C. Arrange the vegetables on a baking tray, drizzle generously with RIO LARGO EVOO and season. Roast for approximately 25 minutes, then finish with another drizzle of EVOO before serving.
