Meet the designers of Qamīs: Fragments of Dress.

For Fragmenta N°2, we invited designers to explore the shirt through their own practices, looking at its materials, construction, history and cultural context.

Their work forms part of a larger research process that has taken us through factories, workshops, archives, collections and conversations across the region.

Over the coming weeks, we’ll introduce the designers and share the ideas, materials and processes behind their pieces.

Gyotaku (魚拓) — inking a fish, pressing it into washi (和紙). 魚 (gyo) fish, 拓 (taku) rubbing.

Chef Ricardo made this one. His first.

The same fish that goes into the print goes into the kitchen. That’s how the fishermen worked — inked, pressed, then cooked. Nothing wasted.

Our guests got to try their own hand at gyotaku.

The evening was led by @roberta.khouri
She works the way the tradition asks — real ink, real fish, one impression each.

And this one’s dinner.

Future evenings by invitation.
Comment “ink” to be added to the list. Chef examining a large gyotaku (traditional Japanese fish-printing) artwork displayed on a table in a softly lit Japanese restaurant, highlighting artistry and culinary craftsmanship. taken in Dubai, United Arab Emirates by @roberta.khouri

In Edo-period Japan, fishermen used to ink their fish and press them onto paper before cooking — a way of recording the catch. The practice is called gyotaku.
It’s the artwork you’ll find throughout our menu, and through the restaurant. So we held an evening around it.

Is this Dubai's Most Unique Dining Experience? @tansodubai

The evening began with a hands-on Gyotaku workshop led by artist @roberta.khouri where we learned the traditional Japanese art of fish printing and created our own prints to take home.

It was such a fun way to start the night, and the food that followed was every bit as impressive. Highlights included the Wagyu French toast topped with beef striploin, the flavour-packed stone pot rice, beautifully crafted sushi, and a sticky date pudding with a Japanese twist that was the perfect ending.

A dining experience that's about much more than just the food. Thanks @heloise.confidence for inviting me along!
