Craving something different for breakfast today, such a gorgeous Melbourne day. Pancake batter infused with gulab jamun flavours and syrup poured over instead of maple syrup.

Perfect start to the long weekend.

My brain thinking gol gappe can go up a level, but how?

introducing Chocolate gol gappe, filled with chocolate mousse and topped with strawberries.

Perfect end to my evening, I have the biggest sweettooth. Unfortunately not able to make as much and as often as I would like.

Special occasions need special dishes.

Barfi ❤️😍💖 Bars.

A base of the wonderful ParleG biscuits baked in the oven for 8/10 minutes. (Helps from the crumbling)
Filled with barfi - 😋
Topped with white chocolate 🍫. I add gel based food colour if I need to match with a theme, not the liquid one.

A perfect melt in your mouth treat, best eaten with garam garam masala chai. ☕️☕️

A white chocolate fudge that has incorporated the flavours of the humble rasmalai. Every dessert can't be barfi and GulabJaman based, I guess 🤷🤔.

The top layer is Rasmalai based, bottom base roohafza. But, as weird as it sounds - it works.

Ingredients
10g unsalted butter
400g white chocolate
200g sweetened condensed milk
1/2 cup pistachio
1 teaspoon cardamom powder
3 tablespoons of dried rose petals
2 tablespoons of warm milk with
10-15 saffron strands
3 tablespoon of Rooh Afza

Method

1. Using the double boiler method
place butter, chocolate, condensed milk, cardamom powder, and crushed pistachios and allow it to melt and combine.

Divide and Place in two separate bowls
2. Add saffron milk ( heat and add crushed saffron strands) to 1 bowl and stir to combine. Continue to cook for 3/4 mins.
3. In the 2nd bowl add the roohafza and rose petals and combine well. Allow to cook 3/4 mins.
4. Decorate with crushed pistachios, roses and saffron strands.

5.In a tray, put baking paper and pour the roohafza mix and let it set for a bit, then place the rasmalai flavour. Allow to set completely approx 2 hours before cutting and serving.

8-10 saffron strands
3 tablespoons full-fat milk, hot
1 teaspoon ghee

Add crushed saffron strands to hot milk. Stir well and keep it aside to infuse and cool.
4. Make a log with the dough, and roll it into a smooth and thin long. Cut the roll into the desired length and smoothen each roll. I got approx 24.

Melting Chocolate
Add white chocolate pieces and melt it using double boiler methods.

Once fully melted, dip each roll in the melted chocolate. Shake off the excess chocolate and transfer them on a wire rack or parchment paper to set.
Decorating is optional. You can drizzle more chocolate, you can sprinkle them with chopped nuts, dried rose petals, edible foil, and saffron strands.
