gluten-free popcorn chicken, start to finish.

marinated in shallots, garlic, lemongrass and honey, plus a couple of things from tuyet nhi's mom's recipe we're not allowed to share. then it's fried in seed-oil-free oil.

spicy or plain? have it with our new secret sauce dip!

we'd get a bowl of pho with it, too.

episode 2: back in our kitchen.

day 2 of chef tony's chicken pho broth. charred onion and ginger, toasted spices, then we top it off and let it cook.

his notes from episode 1: a light broth, lots of herbs, the chicken on the side.

this broth isn't on the menu yet. dark meat, white meat, or both? tell us.

why do our wings take a whole day?

24 hours in a sea salt brine before they ever hit the oven. that's where the flavor comes from. large, no antibiotics ever (NAE), halal, certified humane wings sourced thru the organic butcher of mclean (@theorganicbutcher)

and yes, they're bigger now. you told us they were too small, so we fixed it. keep telling us how to upgrade

🏈 get your wings on uber eats for ~70¢ each large wing!

you said our paper bowls looked small. so we tested it.

one ceramic dine-in bowl of pho, poured into a to-go bowl. it all fits. same half pound of fresh noodles whether you eat in or take it home.

bigger wings, real bowls for dine-in (falls church soon), more noodles: all of it came from your comments. keep them coming.

40-degree mornings are back. it's pho weather. dine in, take it to go, or get it delivered.
