Centenarians often have something fascinating in common: their biology doesn’t always look as old as their birth certificate says.

One extraordinary example is María Branyas Morera, who lived to 117.

She survived two world wars, the 1918 flu pandemic, and COVID-19 at age 113.

When researchers studied her biology, they found something remarkable: her epigenetic age appeared about 17 years younger than her chronological age, and her gut microbiome showed unusually high levels of Bifidobacterium, bacteria more commonly associated with younger, healthier microbiomes.

And her lifestyle wasn’t complicated.

Three yogurts a day.
Olive oil.
Beans.
Whole grains.
Regular walks.
No smoking.
Very little to no alcohol.
And strong family connections.

No single food made her live to 117.

But her case beautifully illustrates something longevity research keeps pointing toward:

Aging and disease are not exactly the same thing.

The world can feel confusing when we’re constantly told what we should put into our bodies.

But many of the answers have been with us all along, in evolutionary biology.

Think about health through the lens of biology: What did humans evolve eating? How did we move? How did we sleep? What did our social lives look like? And how much has our environment changed compared with the relatively short time our biology has had to adapt?

Most of us don’t need the newest peptide, hyped molecule, or GLP-1.

What we need first is a fundamental understanding of our biology and its physiological needs. And much of the time, that translates into remarkably basic things: fiber-rich diets, fermented foods, whole foods, regular movement, good sleep, and community.

Innovation has its place. But it should be built on top of biology, not used as a substitute for it.

Fiber is one of the most overlooked drivers of long term health and longevity. Most people think of fiber as just “digestion support,” but its impact goes much deeper. It is one of the strongest links between diet and healthy aging.

Fiber feeds the gut microbiome. When beneficial bacteria ferment it, they produce short chain fatty acids that help reduce inflammation throughout the body. Lower chronic inflammation is one of the key factors associated with slower aging and reduced risk of many diseases.

It also helps regulate blood sugar by slowing glucose absorption, which reduces insulin spikes and metabolic stress over time. That matters because metabolic dysfunction is closely tied to cardiovascular disease, cognitive decline, and accelerated aging.

On top of that, fiber supports heart health by helping reduce LDL cholesterol and improving lipid metabolism. It also increases satiety, which naturally helps maintain a healthier body composition without extreme restriction.

Emerging research suggests that certain live fermented foods may help bind some environmental contaminants in the digestive tract, potentially supporting their removal from the body.

The key is live microbes. Many “fermented” foods sold on supermarket shelves are pasteurized, which kills these beneficial bacteria.
👉Here’s what the research has found:

Kimchi

A strain commonly found in kimchi (*Leuconostoc mesenteroides*) bound about  57% of nanoplastics in simulated gut conditions.

In mice, it significantly increased nanoplastic excretion.

Sauerkraut

Certain Lactobacillus strains removed up to  80% of lead and  75% of cadmium in laboratory studies.

Miso

Similar lactic acid bacteria bound up to  95% of arsenic from water within four hours under experimental conditions.

Kefir & Yogurt

In a study of nearly  8,000 people regular consumers had lower levels of phthalate metabolites. Phthalates are endocrine-disrupting chemicals that have been associated with reduced testosterone, fertility issues, and other metabolic effects.

What to buy 
Choose products labeled  raw,” “unpasteurized,” or “contains live and active cultures.” They’re typically found in the refrigerated section.

Pasteurized sauerkraut, pickles, and miso retain their flavor, but they no longer contain the live microbes thought to provide these potential detoxification benefits. by @rootwellapp
