A destination tasting room awaits on a sun-drenched hill overlooking the Appalachians.

In this episode of First Bite, Eater social media manager Emily Venezky (@rosellypolly) and Northeast editor Tierney Plumb (@tiers2you) head to Clarksburg, Maryland’s stunning winery Burnt Hill Farm (@burnt_hill) for a scenic sunset dinner at its anticipated 12-seat chef’s counter. The prix fixe meal lasts three hours and costs a couple hundred bucks, but each seasonal course from its chef Tae Strain — a Maryland native with Michelin-starred credentials — is worth the trip.

Despite the current hyper-fixation on meat, Oyster Oyster (@oysteroysterdc) chef Rob Rubba remains devoted to making sustainable dishes layered with flavor and care. Five years in, the Michelin-starred restaurant is still serving an innovative vegetarian tasting menu ($135 per person) in D.C.’s Shaw neighborhood.

Eater social media manager Emily Venezky (@rosellypolly) breaks down some fermented and berbere-spiced highlights on the seasonal menu in her most recent dining report.

Capitol Hill is now home to a slice of hand-rolled heaven.

In this episode of First Bite, Eater social media manager Emily Venezky (@rosellypolly) and Northeast editor Tierney Plumb (@tiers2you) squeeze into a pair of seats at Maru San (@marusandc), the slender new seafood counter from Peruvian chef Carlos Delgado (of Michelin-starred Causa/Amazonia), to see if the hand rolls, ceviche, and other Peruvian dishes — his favorite childhood crackers included — live up to the hype. by @rosellypolly

A deep red hallway leads to the 70-seat shrine to Japanese barbecue at Beloved BBQ. The intimate, dark-walled restaurant tucked inside Love, Makoto (@lovemakotodc), the Japanese food hall, is the destination for A5 wagyu and heritage American beef, though interesting starters and sides are on the menu, too.

Eater social media manager Emily Venezky (@rosellypolly) grills up tender pieces of steak and dives into her favorite sides in her most recent dining report.

For our last Heatmap update of the year, Eater DC’s Emily Venezky (@rosellypolly) and Tierney Plumb (@tiers2you) dig into the best bites of the bunch.

Just a block away from M Street, year-old Rimtang (@rimtangdc) is serving up Thai comfort food in a brick-walled, two-story town house. The food is inspired by Isan and Bangkok, where head chef Prapit La Femina had her own popular restaurant in the city; her son, Saran “Peter” Kannasute grew up in her original spot and now runs Rimtang's kitchen (in addition to his nearby sushi sensation Kyojin).

In her latest dining report, editorial associate @rosellypolly tries familiar dishes like papaya salad and specialties like a crab omelet.
