What started as excess dry bread mix became nearly 3500 loaves of banana bread prepared for Manitobans experiencing food insecurity.

Through a partnership with Harvest Manitoba, RRC Polytech's Prairie Research Kitchen (PRK) team found a creative way to use donated bread mix that was at risk of going to waste. Combined with a surplus of mini bananas, the team reformulated a banana bread recipe and spent several days peeling, measuring, mixing and baking thousands of loaves.

"It feels good to be able to take something that would of gone to waste and make a tasty snack that will be given back to the community," said Michael Luay, Research Technician at the PRK.

This project involved a much larger scale of production than is typical for research, requiring an “all hands on deck” effort from the PRK team. Production moved to the Culinary Arts labs, where up to 600 loaves could be baked at a time. Co-op students also helped with production, gaining hands-on experience in large-scale food production while considering food safety, quality and consistency across batches.

Together, Harvest and Manitoba and PRK have created a special treat that will be included in food hampers for families and individuals in need across the province.

On Friday, October 30, RRC Polytech grad Tessa Potter is taking the stage at CreativeMornings Winnipeg’s free event at The Forks to talk about her exhilarating career in sports broadcasting. All RRC Polytech alumni and community members are warmly invited to attend!

Tessa Potter is a broadcast technician who has spent more than 20 years working with a variety of wonderful people in a challenging – but incredibly rewarding – career in media and entertainment technology. Her career has taken her around the world, working on some of the biggest sporting events in broadcasting. Winnipeggers and Jets fans alike will be familiar with her work as well: she spent more than a decade working at True North Sports + Entertainment (TNSE) as a Broadcast Liaison, where she supported NHL and AHL broadcasts.

In 2025, Tessa was honoured with RRC Polytech’s Distinguished Graduate Award, recognizing her career and contributions to the industry. And, her work with NBC on the Paris and Beijing Olympics has earned her two Emmy Awards.

Committed to fuelling the EV revolution, Toronto-based beevrGO+ has recently plugged into the vast array of resources at RRC Polytech to advance its mission of simplifying and streamlining the charging experience for both drivers and operators.

Their exploratory applied research project aims to:

- give both partners a better understanding of the usage and consumption patterns of EV charging infrastructure
- demonstrate how advanced analytics can improve charger utilization, customer experience, infrastructure planning, and long-term financial sustainability
- explore how intelligent management of existing charging assets can complement infrastructure expansion, creating a more efficient and equitable clean energy ecosystem

The collaboration is expected to deliver a better charging experience for EV drivers, while providing charge point operators with a comprehensive resource management framework and evidence-based policy recommendations to guide governments; municipalities; postsecondary institutions; utilities; and local communities in planning future investments and operational strategies.

The project will also establish a scalable roadmap for expanding similar data-driven approaches into other clean energy and smart infrastructure sectors.
