He hadn’t been on camera in eight years. That morning, he was talking to 40 kids about bald eagles. By afternoon, it was burrata.

@ryanjefferson calls himself “just a dude on the island that enjoys good food, with a short resume in hospitality.” Slight understatement — he’s now five restaurants into Bali and co-founder of Clean Plate Collective, behind @kala.uluwatu, @lolasbali, @lolitasbali and @2moods.bali.

Now there’s @my_dear_clara, a few doors down from KALA in Uluwatu. Italian-inspired, but not Italian.

“We don’t want our guests to come in here and be like, ‘Oh, I’m walking into Italy.’”

So they make nearly everything themselves. Burrata, mozzarella, ricotta, halloumi and stracciatella, all from a working cheese factory. Pasta rolled through service. A cocktail lab pulling flavour from basil, grapes and whatever comes next.

“There are a lot of shortcuts you can take. We’re not taking any of them.”

Ask Ryan about umami and he’ll tell you:

“I don’t even know what that means.”

No food-speak, no fuss. Just people who care enough to make things properly.

Start with the burrata. And don’t get your own.

“Get it for the middle of the table.”

The reason we came to Tuscany was to renew our vows in the most meaningful way we could imagine.

We’ve been together for 8 years and married for 6. Our wedding in Bali was small and intimate, but it remains one of the most meaningful days of our lives.

After it, we never got to have a honeymoon because of the pandemic. Back then we promised ourselves that one day we’d celebrate it properly in Italy. Then life happened and we had our second baby, the 6 years flew by, and finally, in 2026 the time has come. Our honeymoon through Italy and Greece, just as we had imagined all those years ago. To be honest, it’s very big for us, and I love that we are calling it a honeymoon, because it’s a beautiful opportunity for us to fall in love all over again, and on a way deeper level, because now we are a family with 2 children, with a few years of marriage behind us, with so many lessons learned along the way, with many hardships, with the happiest and saddest moments of our life that we had together side by side. We’ve lived through hundreds versions of ourselves together.

While planning the trip, Ryan suggested we renew our vows. And I’m so happy we did. We laughed, we danced, we read letters we’d written to each other, and promised each other, once again, the life we’re choosing to build together, all in the beautiful setting in Tuscany.

Kala was invited to do a restaurant take over at @spiros.almaty in Khazakstan.

We took advantage of this work event timing, and the team all flew out seperately to link up across the world, run around between Khazakstan and Uzbekistan to experience new cultures, talk shop, and eat heaps of good food.
