Voit toivottaa Saaralle onnea finaaliin kommenteissa. 🤩 Tyttöpalkinnon voittaja julkistetaan 7.10. 🩷

The quote on my bag says ”Is there anything a Finnish woman couldn’t do?”. I got it from my publisher when I was writing my first book.
Thank you Minna Canth for these wise words. 🙂‍↕️🫱🏻‍🫲🏼

THE RECIPE ⬇️🥚🧈🧂

For the Egg Butter, the Karelian Pies are too difficult to explain like this. Maybe I could do a video sometime when I make them again. 🤔

Bowl of EGG BUTTER

🥚 Four hard boiled Eggs
Boil the eggs around 7-8 minutes. Then get rid of the water and give them an air bath for few minutes. After that fill the pan with ICE COLD water 🧊 the eggs might warm up the water so make sure it stays cold. The eggs can’t be hot when you take the next step.

Peel the eggs and mix together with 100 grams of room temperature salted butter. Check the flavour and add salt if needed.

Enjoy with Karelian pies or rye bread. 🤤

The travel photos I ALWAYS take ➡️, but almost never post. I was thinking when I was on my way to Finland that probably everyone of us takes the same photos from the airport. 😁

Also I always take the video when my suitcase is on the belt. But why, why do I do that? 🙈

Not my usuals, but I think a bit more interesting 🤗 I have so much rye bread at home so that’s why it’s not on the essentials list this time. I also wanted to get Aurajuusto, but sadly the store didn’t have it. 😭

What a weekend! A little bit of karaoke, a little bit of leaving party and finishing it off with a Finnish dinner with our friends. 💕

Karaoke high lights was me and Guitarman performing System of a Down Chop Suey! 🫱🏻‍🫲🏼🎶

Rikospodcastaajan BTS-materiaalin voisi kuvata olevan melko yksitoikkoista.

THE RECIPE⬇️🫐🥛🧈🌾🍚

Crust:
🧈 125 g butter
🍚 ¾ dl sugar
🥚 1 egg
🌾 ½ dl plain wheat flour
🥄 ½ tsp baking powder
🌾 4 dl quick oats

Filling:
🫐 3 dl blueberries (WILD, sold as bilberries outside the Nordic countries and usually they are frozen)
🥛 2 dl sour cream (or creme fraiche if you are not able to get Finnish sour cream)
🍚 ½ dl sugar
🥚 1 egg
🌼 2 tsp vanilla sugar (or liquid vanilla)

Instructions
First the crust:
Beat the butter and sugar together until light and fluffy. Add the egg and mix it in with the butter sugar paste.

In a separate bowl, mix together the flour, baking powder and oats. Add the dry ingredients to the butter mixture and mix until everything is nicely combined.
Grease a pie dish with butter and press the dough evenly into the bottom and up the sides.

Then the filling 🫐
Spread the blueberries evenly over the crust.
Mix together the sour cream, sugar, egg, and vanilla. Pour the mixture over the blueberries.

🔥 Bake at 175°C on the middle rack for about 35 minutes, until the filling is set and the top is nicely golden.

✨ Let it cool for a little while before serving and ta-daa enjoy!

Two days in New Forest🌲 On Saturday we did a 2,5 hours cycle route and on Sunday we went for a long walk in the forest. Let me tell you that it feels so good to be in the nature especially when it’s autumn. I grew up in a house surrounded by big forests and I gotta admit that I am forever a countryside girlie. 👩🏻‍🌾🚴🏻‍♀️🌾

Weekend away in New Forest. 🌲 I was so surprised to see those fellas in the last pic. They were just walking around the town on their own. And tbf I was surprised that New Forest has wild ponies just walking around everywhere. 🐴

It’s a bank holiday weekend in the UK and we also had a reason to celebrate (I will tell you later😌).

Cycling in the rain makes you feel alive! 🤩
