On the menu August 8th at Sude’s. Victoria sponge with nutmeg, cardamom and black pepper soaked in a chai simple syrup, topped with a vanilla bean custard, a brûlée’d fig, blackberry and walnut. The flavor pairings aren’t that crazy, but flavor matrix helped me try something new, shoutout. by @saddqas.table

No-vodka vodka pasta with almond flour breaded chicken and a coconut cream.

The breading for the chicken peeled off because I didn’t do the 3 step method for breading and also I think the almond flour just doesn’t cooperate the same as AP. I wanted a pasta dish that was on the sweeter side but still savory and I think the combination of almond flour, the sweetness of the tomatoes in the sauce and the coconut cream were a good combination. taken in Brooklyn, New York by @saddqas.table

Oranges are my least favorite citrus, so naturally they’re in season and I decided to tackle a long held hatred for them.

Orange blossom victoria sponge cake soaked with a blood orange and rose simple syrup sitting on a nutmeg and cardamom spiced pastry tart. Topped with a vanilla bean whipped custard, candied mandarin slice and peel, a poorly supremed mandarin which was brûlée’d, and a blackberry. by @saddqas.table

Rosemary brown butter Madelines with a pear mandarin thyme compote and a honey glaze. I didn’t have any other citrus for the pear compote so I pulled the mandarin from my fridge and tried that, I think it worked well. The Madelines came out great with the brown butter. taken in Brooklyn, New York by @saddqas.table

Date donuts, the dough is infused with cardamom and cinnamon. Filling made from sukkary dates and browned butter. Honey glaze on top. Finished with half a date and dried rose.

Pretty happy with how it turned out, might play around with different spices in the dough for different flavors. by @saddqas.table
