Breaking down a massive 4 bone rib roast from @mosidamarket for @sadibousy Brisket, Burgers and Beers Summer Pool Party Bash. This is just a warm up for our November Friendsgiving. Breaking down the 4 bone roast consists of removing the top lifer meat to expose the ribeye meat. I’ve been asked before, why not just have the Butcher remove the lifter meat. Well, i love the prep of it and continue to learn how to break down meat. On top of that, Sadi and @minoubritmer love the lifter meat and braise it for future cooks for delicious braised beef. Then i expose the bones and turn it into a Tomahawk Rib Roast. Seasoned with my All Meat With Rosemary and topped with a layer of @redmondrealsalt Fine Ancient Sea Salt. I love doing this stuff, never gets old. The rib roast was cooked to a perfect wall to wall medium rare. Huge thank you to @samantha_will_ford @thebutcher.and.hiswife @wheelin_dealin_farmer for the front door delivery service 🙌🏼🫡.

You’d think a backyard full of world champions would be intimidating. It was the exact opposite.

Good food, great people, and a reminder that the most impressive thing about successful people isn’t what they’ve accomplished, it’s how they treat others.

Dinner number 1 @sadibousy House in Vegas was 4 racks of beef dino ribs. This was a last minute add and clearly they didn’t disappoint. I brought my @traegergrills Woodridge Pro to get some work done and smoked these at 225° for the first 4 hours, then another 5 hours at 275°. No wrap, just smoked straight through till probe tender which was between 205° and 207°. Seasoned with my not yet released brisket rub. Rested for 2 hours before slicing. Sadi and @sugarraysefo were my first taste testers and they passed and then some. More to come from our pool party weekend.

107° in Las Vegas didn't stop us.

Flew in from St. Louis and straight into the desert heat for the Briskets, Burgers & Beers Pool Party.

2 Snake River Farms Wagyu briskets. Reverse-seared 4-bone tomahawk roast from Mosida Market. Countless smashed burgers.
Smoked mac & cheese, hand-cut fries, griddled esquites, homemade focaccia, two different slaws, smoked Cheez-Its, and fresh chimichurri.

A whole lot of food, a whole lot of heat, and even more memories.

Some of the best coaches and fighters on the planet were there, but once you walked through the door, none of that mattered.

No titles. No egos. No status.

Just people. Friends. Food. Drinks. Laughs. And another unforgettable pool party. taken in Las Vegas, Nevada by @sadibousy

Day 2 of Friendsgiving hit different. I had the honor of cooking alongside Bennie Kendrick, who casually put on a masterclass — the 8-bone tomahawk roast, a 24lb spatchcocked turkey, sweetheart turkey breasts, and those Cajun-butter–injected turkey legs seasoned with @tfti.bbq Cajun Honey Butter Rub.

I held down the sides: smoked Mac n Cheese and apple pie baked beans loaded with ground beef seasoned in @texaspepperjelly APS, plus red pepper and onions for extra depth.

Sadibou Sy and his wife brought their dishes, and together we fed the who’s-who of Vegas MMA — Olympians, UFC headliners, PFL champs, and straight knockout artists.

At the end of the day it didn't matter who you were or what you’ve done — fighters, families, friends, everyday folks — everyone came together over good food and good vibes. Community, friendships, happiness.
