Sharing a realistic (and not so aesthetic) meal today. Just got home after a long weekend away and didn’t have much in the way of groceries. What I did have was some frozen meal prepped chicken, rice and a few random things in the fridge. Thank you Jesus for always finding a way to provide šŸ¤

Love me a good bowl! It’s been a busy few weeks but I’m always grateful for the time I have to prep and cook my meals. Bowls of any variation are often on the top of my list for nutrient dense convenience, so for this week’s rotation…

Happy Valentine’s Day šŸ’— 

Enjoyed a homemade steak flight for dinner and it was incredible 

Dish 1 was toasted French bread with a fresh lemon herb butter, Boursin cheese, caramelized onions, and chimichurri. This receives top dish award, it was perfection and would eat it everyday 

Dish 2 was cheesy fries (all from scratch of course) garnished with a little parsley and fresh Parmesan. Ranked second for Ashton and third for me but it was close. Would definitely make again, delectable 

Dish 3 we made garlic mashed potatoes topped with more of the caramelized onions, lemon herb butter, and thyme. This was my second and Ashton’s third favorite. Complex flavors, melts in your mouth, delicious 

Dish 4 finally was a garlic shrimp pasta with mushrooms and Parmesan. Only ranked fourth because it was leftovers from last week I had frozen but still yummy and topped with chimichurri 

I would argue this was one of the best meals we’ve ever made and I would absolutely recommend making a steak flight instead of going out to dinner for your next special occasion!

Food dump!! Just some yummy meals I’ve been eating the last few months: 
1. Homemade pasta with a fresh ground beef sauce 10/10 made w/ friends <3
2. ā€œChipotleā€ bowls but homemade! 9/10
3.  Garlic shrimp pasta- made a mess putting together and overcooked the pasta but the flavors were unreal 8/10 but would make again and make it a 10
4. Classic ground beef and cottage cheese but added arugula and beets for some veg 9.5/10
5. Grilled chicken sandwich with chipotle sauce and a kale salad 10/10 amazing, meal prepped, super filling
6. Greek dressed sheet pan gnocchi with lentil, egg plant, zucchini, bell pepper, onion and kale 6.5/10 for taste but I swear this is the reason I did not get sick when everyone else did. Eat your veggies!!
7. Panini breakfast sandwiches 9/10 messy but so much better than just toasting the bread 

Many more meals but I don’t often make them look good but always think about getting in greens and hopefully other veggies, complex carbs, and protein! by @sagesdailybread

Something a little different as I wrap up my quarter in Micronutrient Metabolism and Nutrition Education:

We’re talking about bone density today! 

We often hear about hip replacements and fractures in elderly adults, but I want to talk about how important it is to start thinking about bone health as a YOUNG adult. 

Most individuals will reach peak bone density around the age of 25-30. Cells that actively build bone (osteoblasts) have the greatest activity in this population. The bone mineral density you build in these years sets the foundation for what you maintain the rest of your life.

So…while prevalence of weak bones commonly known as osteopenia/osteoporosis is in elderly, it’s what you do in your childhood/early adulthood that determines your risk. 

A few ways to decrease your risk for these conditions is to start nourishing your bones now! 

1. Make sure you’re consuming adequate calories: Not only for bone metabolism to maintain high turnover, but to fuel all the other essential functions your body does to provide energy and strength! 

2. Think about MICROnutrients: All this talk these days about macros can be overwhelming but I think we should be talking more about micronutrients. For bone health, calcium, vitamin D, vitamin K, magnesium and phosphorus are important nutrients to consider. 

*Bonus tip for vitamin D: Go outside!! During spring, summer, and fall months particularly, UV light can provide 4x the RDA in just 5-10 minutes in fair-skinned individuals. 

3. Exercise: Whether you’re a regular gym goer, runner, golfer, pickleball player or other, getting active is one of the best things you can do for your bones. High impact, high velocity workouts are most efficient in stimulating bone remodeling, but anything weight-bearing also helps!! 

So this winter I challenge you to eat more calcium, add 5 minutes of higher intensity exercise to your day, and fuel up!

Breaky and trail snacks in sequoia! Hiked 30 miles over 2.5 days and fueled up good! 

For breakfast we did avocado and bagels, hard boiled eggs, coffee and electrolytes. We brought stuff for wraps for lunch and snacks included chomps, grapes, protein bars, cuties, pringles, peanut butter pretzels, trail mix and pb & j. 

Had a gu packet right before a steep climb about 8.5 miles into our 14 mile hike. Prioritized hydration constantly and fueling with plenty of carbs to maintain energy. Loved packing snacks for this and figuring out just how much to fuel with! by @sagesdailybread

Another day another unposted meal! Found the BEST little Italian spot down a back alley- Ristorante Pietro Valentini. Their menu may be set but ingredients adapt based on the season. 

This time I went, I had Fettucini ā€œSimonaā€ā€”guanciale, tomato sauce and peas as a sub for the out of season asparagus. It was perfect 🤌
