Two colorful salads using seasonal produce to accompany a steak dinner! 🍽️πŸ₯©πŸ₯—
The first salad is one I like to call the salad of the summer: juicy sweet peaches, heirloom and cherry tomatoes, fresh basil and chunks of mozzarella, mixed in olive oil and S&P. This is the Peach and Tomato Salad with Mozzarella and Basil from, β€œeat small plates,” @bengingi @chefzikki πŸ…πŸ‘πŸŒΏ
The second salad, also from Eat Small Plates, is the Burnt Beets and Feta Salad! Oven roasted beets are sliced and tossed with lemon juice and pistachios, plated and topped with crumbled feta, more toasted pistachios and fresh mint leaves. A wonderful combination of flavors and textures: crunchy, creamy, tangy, earthy, herby! πŸ˜‹πŸ˜‹πŸ«œπŸ«œπŸŒΏπŸŒΏ

Juicy ripe tomatoes, thick slices of calabrese, toasted, grated extra sharp cheddar stirred into mayonnaise and fresh garden basil. Yum! πŸ˜‹πŸ˜‹πŸ˜‹
πŸ‘ Peach Toasties - sliced peaches, toasted calabrese, shredded Comte, chopped hazelnuts, fresh mint and a drizzle of balsamic glaze.

These irresistible cookies include chopped dark chocolate in the recipe but you get the added bonus of mixing in a salty snack or extra chocolate treats! πŸ˜‰ I added peanuts and chopped mini peanut butter cups in my batch! πŸ˜‹ Some cookies got adorned with a cute pretzel twist but ALL got a sprinkle of flaky sea salt. πŸ₯¨πŸ₯¨πŸ§‚πŸ§‚πŸͺπŸͺ

One-Pan Dumplings with Greens πŸ₯ŸπŸ₯ŸπŸ₯¬πŸ₯¬ This easy recipe comes from @nytcooking by @itsalislagle and is one of the 25 most popular recipes of 2026 so far. 
The recipe uses frozen dumplings and whatever greens you have on hand. Kale is the suggested β€œgreens” but after reading the comments some readers suggested cabbage, spinach or other greens. Readers also added other vegetables as I did too. 
It’s good to have vegetables prepped and ready to go as the cooking of ingredients goes fast. Start by browning the frozen dumplings, set them aside. In the same pan add ginger and garlic, then the greens and vegetables and cook until greens are wilted. Place dumplings on top of the veg, add water and let steam for a few minutes. Finish the dish with a drizzle of soy sauce, rice vinegar and garnishes of your choice. πŸ˜‹πŸ˜‹ For greens I used kale and cabbage and added sliced carrots and pea pods. πŸ₯¬πŸ₯ŸπŸ«›πŸ₯•πŸ§…πŸ«šπŸŒΏ Bowls were garnished with sesame seeds, green onion and cilantro. This is a delicious meal! I can see why it made the top 25 recipes! πŸ‘πŸ‘

eat small plates. vibrant, shareable dishes for daily joy

This book came in the mail over the weekend and I had a chance to read from it this morning. The bios on these two chefs is an interesting read; I like hearing how they each got their start! 
As I was working through the book I couldn’t help but start making an ingredient list in my head. I came to the realization that I had a lot of ingredients from the Welcome Olives section. This is a chapter on snacks to welcome your guests, not necessarily with olives, although olives are always a part of my welcome snacks/charcuterie/grazing board! πŸ«’πŸ«’
I easily put together a few of these delicious treats:
- raw nuts, toasted … I used walnuts
- cheese and seeded crackers with a sweet element: fig jam
- sumac cucumbers 
- dates filled with creamy goat cheese and topped with toasted, chopped pistachios 
- mixed olives
- gray salt (the chefs stick with one type of seasoning salt)
- cherries, they are in season πŸ˜‹

These small plates made a delicious lunch and will definitely be part of my next get-together! I can already tell I’m going to enjoy this book!

Three Cheese Chicken Enchiladas 🌯🌯🌯
These are my go-to enchiladas! The recipe is from, β€œTreasures of the Mexican Table,” @patijinich πŸ‡²πŸ‡½
Shredded cooked or store-bought rotisserie chicken is portioned and rolled into corn tortillas, placed on a layer of salsa (either store bought or using the recipe in the book), topped with more salsa, sour cream, grated mozzarella, Monterey Jack and a final cheese: grated Parmesan! πŸ§€ The cookbook has options for different cheeses, etc. I’ve mentioned the varieties I used in this dish. πŸ‘Œ Bake until all that delicious cheese is melted and browned! Yum!
Serve with your favorite toppings! πŸ˜‹πŸ₯‘πŸŒΆοΈπŸŒΏπŸ‹β€πŸŸ©

Chocolate-Cardamom Snacking Cake πŸ˜‹
A wonderful chocolate cake with floral and citrus notes from cardamom. All the chocolate flavor comes from 60 grams of cocoa powder enhanced with coffee (either instant coffee dissolved in hot water or espresso powder; I used the latter). The cake is easy to mix together using a whisk, no mixer required. All this cake requires for a topping is a dusting of icing sugar, and if desired, a garnish of fresh fruit or other decoration of your choosing!

Pasta Primavera 🍝πŸ₯•πŸ₯¦πŸ§„πŸ§…πŸ«›πŸ…πŸ§€πŸŒΏ

This is a dish I make quite often. Not only is it delicious and filled with colorful veggies, but it’s also a good vegetable drawer clean out! It’s perfect for using up those bits of veggies hanging out in your fridge! πŸ‘
This version has sautéed zucchini, carrots, garlic, red onion, cauliflower, broccoli, cherry tomatoes, pea pods, grated Parmesan and lemon juice mixed into noodles. Garnished with more Parmesan cheese, fresh basil and red pepper flakes for those that want a bit of heat.

It was a rainy month and comfort food was needed, hence a big pot of chili. 🌢️ 
⛰️ Road trip to Canmore, a lovely mountain town in Alberta’s Rocky Mountains, on the border of Banff National Park. A few photos of this pretty town, amazing views of Three Sisters mountain peaks, as well as Ceannmóre sculpture and murals.

⛲️ Pileated woodpecker getting a drink of water in our backyard. We see a few of these large red-crested woodpeckers around our neighborhood; first time I’ve seen one in our yard though. Hoping that next time I can get a clearer pic; I didn’t want to scare him away!

Italian Breakfast Cake with Olive Oil and Polenta 🍊🍊🍊
A citrus bake for the end of month baking party hosted by @rainydaybites ! 
Citrus is today’s theme using recipes from Baking and The Meaning of Life @helen_goh_bakes πŸ˜‹ 
The citrus flavor in this breakfast cake comes from orange zest. Even though it’s only the zest of one orange, the flavors really come through as the zest is rubbed into sugar and vanilla bean seeds, releasing all the oils from the zest and making the flavor more intense. Added to this mixture is olive oil, eggs, cream, the dry ingredients, then the batter is poured into a buttered Bundt pan to bake. I finished the cake with a dusting of powdered sugar and a dollop of Greek yogurt!  Helen suggests serving the cake with marmalade and/or yogurt. A delicious cake however you choose to serve it! πŸ‘
