Feelin’ clammy? Even if you’re not, this is what’s for dinner 🤪 if you can’t tell from my reaction, it was soo dang good. The clams add so much umami to the broth and the lemongrass and coconut make it sweet and fragrant. It’s good, you’ll love it!!

Comment “clams” and I’ll send you the recipe! Make sure you’re following or you may not get it.

Ingredients
12 clams, cleaned
1/2 cup full fat coconut milk
1/2 cup water
1 tsp chicken bouillon
1 tsp maple syrup
1 tbsp fish sauce
1 lime, juiced
2 garlic cloves, minced
1 tbsp lemongrass, minced
1/2 tbsp ginger, minced
1 shallot, thinly sliced
Cilantro

1. Mix the coconut milk, water, chicken bouillon, syrup, fish sauce, and 1/2 of the lime juice.
2. In a small pot with oil on medium heat, saute the garlic, ginger, lemongrass, and shallot until fragrant.
3. Place the clams inside and pour in the broth. Cover and let it simmer on low until clams begin to open up (~10 min).
4. Taste and adjust the broth. Garnish with cilantro and more lime. Enjoy with a bowl of rice!

Have you had mala dry pot before? First time was in college and my friends added beef tongue. Idk why it didn’t click for it that it was a real tongue. I loved it until I got the tip of the tongue and saw all the taste buds 🤢 that’s what dry pot reminds me of now but anywho, think of it as hotpot but without soup! Great way to use up leftovers 🤗 and no tongue was used in this 😝

Ingredients I used but feel free to substitute with what you have/prefer!

Bok choy
Enoki mushroom
Fish balls with roe
Beef and pork slices
Sweet potato noodles
Rice cakes
Garlic slices
Hotpot base

Pretty much like a sheetpan dinner but I think roasting it in the airfryer gives everything a nicer crisp and nothing becomes soggy! Go to my last video if you want the balsamic chicken marinade. The sweetness of the marinade added flavor to the veggies underneath, delicious!! Using my beloved @ninjakitchen Crispi!

You’ll want to save this because this will come in handy for those weeks where you can’t figure out what to cook. Cuts down on thinking about what to make, which is half of the battle when it comes to dinner! Thaw it, prep the sides, and done!!

1/2 lime, juiced
3 garlic cloves, minced

Not traditional galbijjim but wowow, this might the best thing I’ve made all year. So tender and perfectly sweet and flavorful. And for the price of chuck roast compared to short ribs, even better 😮‍💨 @instantpotofficial

Comment “recipe” and I’ll send you a message! Make sure you’re following or you may not get it.

Ingredients
1.5 lb chuck roast, 1” cubes
1 Japanese sweet potato, 1” pieces
2 carrots, 1/2” pieces
1 cup rice cakes
3 green onion stalks, greens and white separated
6 dried shiitake mushrooms, soaked in 1 cup warm water
1/2 cup soy sauce
1 tbsp sesame oil
2 tbsp syrup
1 tbsp brown sugar
1/2 tsp black pepper
1 kiwi
1/2 onion
1” ginger
6 garlic cloves

1. Blend the garlic, ginger, onion, and kiwi into a smooth puree. Mix in the soy sauce, sesame oil, sugar, syrup, and pepper.
2. Add the meat, sauce, and mushroom water (not the mushrooms) to the IP. Cook on high pressure for 25 min and natural release for 10-15 min.
3. Remove meat and half of the sauce. Press Saute and add the carrots and potato. Cook until softened and sauce reduces to less than half of what you started with.
4. Add the meat, rice cakes, mushrooms, shishito peppers, and green onions. Mix well. Add more sauce if preferred. Enjoy with rice and kimchi!

If you don’t know where to start for hotpot at home, hopefully this helps you get started! I keep it relatively simple at home with ingredients I know I’ll eat in other meals. No waste here!! If you’re looking for all the selections at an all you can eat hotpot restaurant, your grocery bill will probably be higher than if you just went to the restaurant 🤣

If you do this already, is this similar to how you make it at home?

I’ve been in a cocotte phase and idk why, they’re cute! We bought this beef days ago but I just had no motivation to cook it 😣 So today was the day!! It was starting to oxidize which was throwing me off 🥴 all good though, we are alive and beef was fine! Ps. I know this is actually called cottage pie but I’m used to calling it shepherds pie 🤫

Comment “recipe” and I’ll send you a DM! Make sure you’re following or you may not get it.

Ingredients (4 mini pies)
1.5 lb ground beef
1 Lipton French onion dip packet
1 can cream of mushroom
1 cup Mexican cheese, shredded
1 can corn, drained
Mashed potatoes (instant or homemade)

1. Preheat oven to 375F.
2. In a pan, cook the ground beef and drain some of the grease when done.
3. Stir in the French onion dip packet and the cream of mushroom.
4. Evenly distribute the mixture into the cocottes or a casserole dish. Layer on cheese and corn. Top with mashed potatoes.
5. Bake for 25 minutes and then broil for another 5 minutes or until potatoes are browned.
6. Carefully remove from the oven and let it cool for 10 minutes. It will be very hot!! Serve with rice and salad, enjoy!

I saw @fridasofiaeats use these frozen French onion soups and I couldn’t get it out of my mind! Picked it up at Trader Joe’s and it’s been sitting in my freezer since. I always buy a value pack of chicken thighs and never know what to do with all of them. Why not combine the two?! 🤓 3 ingredients pretty much!

Comment “recipe” and I’ll send you a DM! Make sure you’re following or you may not get it.

Ingredients (2-3 servings)
1 French onion frozen soup pack (comes with 2 soups)
6oz @enjoybrami cubetti
4 chicken thighs
1/4 tsp each (garlic powder, onion powder, paprika, salt)
Pinch of pepper

1. Season the chicken thighs well, including under the skin.
2. In a pan on medium heat with oil, cook the chicken skin side down to crisp it up first. Flip it over after about 5 min. Cook for another 5 minutes before removing and setting aside.
3. In the same pan, drain most of the oil with a paper towel and add in the pasta and French onion soups. Cover and let the soups melt on med-low heat.
4. Stir and add water if more liquid is needed. Add the chicken back in when pasta is 95% cooked. Continue cooking pasta until al dente. Serve and enjoy!

Ironically, Shane’s favorite meal of the day is breakfast lol I’m more of a sweet baked good or pastry with coffee kind of gal 💁🏻‍♀️ since I can’t eat those everyday, this is a good option to still get some nutrients in! What’s your favorite meal of the day??

Finally tried the viral tofu noodles! Put my own twist on it using what I had at home. I loved the miso mushroom pork mix I made, and I think if it was saucier, it would’ve been better. Not bad at all though! Great way to get extra protein in 💪🏼

Comment “recipe” and I’ll send you a DM! Make sure you’re following or you may not get it.

Ingredients (2 servings)
8oz ground pork
1 cup shiitake mushrooms
1 tbsp ginger, minced
2 udon packages
3-4 bok choy heads, washed and sliced in half
~12 oz silken tofu, room temp
2 tbsp miso paste
2 tbsp sake
1 tbsp mirin
1 tbsp maple syrup

1. In a pan with oil on med heat, cook the ground pork, adding ginger and mushroom when pork is 90% cooked.
2. Mix the syrup, miso, sake, and mirin together and stir it into the pork.
3. In a separate pot, blanch the bok choy for a few minutes until they turn bright green. Remove and add the udon. Gently separate the noodles and drain.
4. In a food processor, blend the tofu.
5. Plate the bowl with the noodles, pork mix, bok choy, and tofu. Garnish with green onions and mix well. Enjoy!
