Reposting this because my heart laments for my country. While this rendition is not perfect I can still remember how hard I tried not to cry while singing. We deserve proper leaders and our country deserves proper Filipinos.

 Filipinos who will fight for her freedom not Filipinos who fight each other.

So here we go again part 2 of Ian's banana latte'. This time the star of the drink is our very own Lakatan (Musa acuminata). The extracts that I got this time are sweeter and more flavorful than Saba. A bit more tweaking and this drink will be finished.

For this batch I just used 3 pieces of Lakatan for one drink. Be sure to use the one with some black spots.

Post Grad Reflection
(Drama ahead) 🤣

It's been a week since graduation, and I’ve been reflecting on a lot of things. Things I am grateful for, things I regret, and things I’m still not sure whether to be thankful for or angry about.

I should have marched last year. But a decision I made during the pandemic snowballed into something that held me back, forcing me to wait an extra year. From time to time, I catch myself thinking, "What if I had just continued with the online classes? What if I swallowed my pride and just used Google to answer all the questions and activities?" If I had, I’d probably be somewhere else right now. Maybe I wouldn't have had to break the news to my family that I wouldn't be able to march during our Father’s Day dinner last year. But then I also remembered on that same year my episodes were at their worst and started my medications. 

But hey, I still graduated. Even though some things aren't properly settled, and despite the people and opportunities I've lost along the way, I made it. I still represented the institution on many stages and conferences when no one is willing to step up. I took and made the wins with what cards I am delt with and took many more losses and these things aided me in making me who I am today. 

To my teachers, instructors and mentors thank you for your guidance and knowledge, for making do what available resources was available. For becoming our friends outside of the classroom, for sharing laughter and tears, and for giving us valuable lessons  in our professional and personal lives that are not present in the curriculum.

To the ones waiting for their turn, may you be blessed with better opportunities, learning and discovery. Don't forget to live life, learn what you can, don't be afraid to ask questions, and do your best to help one another. Learn how to document and use proper channels and always ask for receipt. Understand your boundaries and responsibilities, and be the student you want if you were a teacher, be the senior you needed when you were a junior. And never stop learning. 

I am still angry about the path it took, but I am so glad that I am finally done.

So yea this is where some of my mental load went. 

First, what's a Mont Blanc (beverage)? 
Originally made in 2022 at Good Measure in Melbourne, it is a fragrant, slightly sweet coffee drink made with cold brew and a thick layer of cream, dusted with fresh orange zest and a sprinkle of nutmeg. 

Second, why the long process? 
Because I want to apply what I learned in college. 🤄
Nah I was just curious and I like to utilize more local and familiar ingredients for my coffee concoctions. 

That's it from me for now. Next will be the continuation of the banana/saba latte.

Another one of my experiments, this one is not in the notebook yet. So yeah my doom scrolling let me to some sort of rabbit hole. Anyways the captions in the photos are just observations and personal guesses so feel free to correct me if I wrote something wrong.

Some milk wash experiments last week
1. Milk washed dirty matcha strawberry
*Milk wash:
180ml whole milk
15-20ml lime juice
15ml strawberry sauce
1 shot espresso

Steam to 65°C then filter once separation starts

*matcha foam
4g matcha
15ml cream
30ml buttermilk

Something crunchy would be a nice addition, and yeah some adjustments needed. Need to use better matcha as well. 

2. Milk washed coffee-tea spritz
*milk wash:
180ml milk
15ml like juice
1shot espresso
3g Assam tea leaves

Steam up to 70°c and let steep for 3 mins before filtering

Serve over ice with crushed mint leaves and sprite

*Just remove the mint and try using brewed tea instead of tea leaves*

Will try to do tomato clarification next after a side project with bananas
