While samosas are commonly thought to have originated from India, their origins actually lie elsewhere—etymologically, the word “samosa” is said to have emerged from the Persian word “sanbosag,” and the crisp-cornered pastry was brought to India by Central Asian traders (or Middle Eastern chefs who arrived to Delhi, depending on your source). Either way, the Persian point of origin paved the way for far more than samosas—Gladys Shahtou, who founded catering service and pop-up @sambuxanyc , specializes in the Sudanese variation of the dish called sambuksas (which Shahtou deliberately spells as “sambuxas”). She describes them as a “stuffed nacho,” featuring a thin and crisp outer shell that’s been carefully folded and tucked around a filling of spiced ground meat. Sambuxas are the product of a multigenerational recipe passed down from her family—and a staple at her family’s iftars, the meal that breaks the fast during Ramadan.“It’s just plain meat, garlic, onion, and spices, nothing else, and then there’s a version filled with feta cheese and dill. Those have always been our fillings, from my mother’s side of the family,” Shahtou says. “My mom’s specific recipe also uses fresh coriander seeds, which gives it a totally different flavor that’s amazing.”Shahtou has also since made some of her own modifications to her family’s recipe, drawing not only from her Sudanese background but her connections to Switzerland as well. Having grown up there, she uses raclette cheese fillings in some of her sambuxas. 🌙Ramadan Kareem🌙 🌟The first Iftar is always so special, magical. ✨ Sambuxas and Fatayer (empanadas) were always at the center of our family’s Iftar. Precious memories of cooking with my Mama always rush back. Finishing the Sambuxas and #Fatayer with my siblings and father, immediately after breaking our fast and praying. 😂❤️Mama always made us finish the shorba Addas (lentil soup) first, before endulging in the yummy fried goods.
