Ellis Island Spritz — technically part of the Mediterranean diet, so it’s good for you. Here, we bring together the flavours of the Old World and the New World. We’ve got our olive oil corn whip, where we’re taking intensely flavoured corn stock and emulsifying it with olive oil. That gets added to tequila, some pineapple juice, a little lime juice, and a touch of cilantro for a rich, earthy, bright and tropical punch. It’s a crushed ice drink, served very tall, with some pineapple fronds coming out the top, and an incredible texture — really, it’s very transportive. You’ll be in DC, but you won’t feel like you’re in DC. Tequila Ocho Plata, mezcal, olive & sweetcorn whip, sour pineapple, lime. by @samuelnellis
Ellis Island Punch — a lightly savoury cobbler inspired by one of America’s most enduring family myths. The story goes, says Sam, that millions of immigrants arriving through Ellis Island had their names changed by officials who couldn’t understand or spell them. It’s a tale that appears in countless family histories — and even The Godfather — but there’s one small problem… it didn’t actually happen. Immigration officials worked from ship manifests created before passengers had even left Europe, rather than recording new names on arrival. That meeting of old and new worlds inspires the drink itself. We take olive oil, representing the old world, and emulsify it with a sweetcorn stock from the new — creating a rich, velvety texture reminiscent of a Piña Colada, only with corn and olive in place of coconut. Faces Friday! Celebrating the people who make the hospitality industry special. This week we’re spotlighting General Manager Alex Leidy and Head Bartender Sam Nellis at Silver Lyan in Washington DC. Alex has been an integral part of the Silver Lyan team since joining in January 2020. With a diverse background in the Washington DC hospitality scene, working across institutions from Michelin-starred restaurants to late night speakeasies, he now leads the day to day operations of one of North America’s finest establishments. Sam Nellis oversees cocktail and menu development at Silver Lyan with 12 years of experience in the industry, trains the team and manages service planning for all bar activations. His leadership focuses on fostering a positive, collaborative environment, ensuring the team delivers world class hospitality every night. When Alex isn’t working, you can find him trying all the latest restaurant spots in the city or cooking up a storm at home. He highly recommends the Smithsonian Museums (obviously!) and Dumbarton Oaks in Georgetown - with the Byzantine and Pre-Columbian works. Eating out? He loves Bar del Monte, Izakaya Seki, The Green Zone and Trouble Bird. His favourite cocktail changes depending on the day: either a Negroni or a 50/50 Martini. Meanwhile, Sam loves spending time with his wife and two dogs. After 17 years together, their favourite activity is still having a long chat on the couch over a glass of wine. In DC, he recommends the wonderful free museums, especially the National Museum of African American History and Culture, though really they’re all worth a visit. You’ll often find Sam with his favourite cocktail, a wet gin Martini, at OKPB, or enjoying a burger at Eebee’s Corner Bar by @samuelnellis
Beyond thrilled to be announced as one of @starchefs Rising Stars. The list of fellow honorees is humbling to be amongst. The DMV has some incredible talent that I’m proud to be a small part of and it encourages me to push myself hard everyday to be at the top of my game. Nothing I’ve done has ever been possible without the tight community of DC bars and restaurants and, especially, DC’s world-class bartenders. by @samuelnellis
