So recently I entered the chef competition with work. The dish brief was a main that incorporated potato and an accompanying side dish. I created a trio of Korean tacos, consisting of: Gochujang Birria with a coriander caviar, Pork Bulgogi with black beans and Dalgangjeong chicken with pickled shallot and homemade sesame mayo, then for the side dish; Elotés with the sesame mayo. Genuinely really proud of myself. Didn’t win but that’s life #chef #asianfusion by @satanssouschef

I’ve been trying to get the plating right on these corn ribs for ages, it really annoyed me how difficult I found it. Even with a spec next to me I still couldn’t do it. Last night I got it and it filled me with so much joy. Odd how even stuff like that still makes me smile. #cheflife #chefmentalhealth by @satanssouschef

Salt and pepper chicken loaded fries. Bit of a ready steady cook esque thing. Velvetised my chicken breast, fine sliced onion, garlic and ginger, chopped red pepper, leftover fries from domino’s last night.
