#climatecrisis affects everything. Produce tastes like nothing and is poor quality. Can’t be outside because the air is toxic. So I made gluten-free pancakes with all the inedible produce we had in the fridge. NO waste. Sweetened with cinnamon and ripe bananas and served with a fruit and orange lemon reduction, with a dollop of tahini cinnamon yogurt crema. This is a good for you food that tastes amazing. Gluten free and vegetarian (no butter just eggs and yogurt as the only animal ingredients).

As for climate change. It’s real.
And it’s caused by humans. Not Canada or Mexico alone but HUMANS. The fruit in markets has no flavor. Industrial agriculture is letting fecal refuse run into private farms causing parasitic illnesses. AI centers pillage water and resources that are better used for farming. It will only get worse. So the culinary world better get acclimated to how to turn this advancing threat into something that might be edible and sustainable and nutritious. Wear a mask. Stay safe. Eat well. #farming #homecooking #climatechange #homechef by @saucybakery

As the song says: Time after time. Time after time we came for the food and we continued to come back for the hospitality. This was our special place. This is where we had our wedding dinner. Celebrated wins and losses. Found some really amazing wines the names of which we can’t remember. This is where they made the duckiest duck and the chickeniest chicken. And where we truly felt welcome. We are gutted. Thank you @tomcolicchio for creating such sanctuaries and mentoring the next generation of chefs. A NY without one of your restaurants just doesn’t seem the same. @craft_newyork #nyc #craftrestaurant #tomcolicchio #restaurant #nycrestaurant by @saucybakery

@shukettenyc That was FN amazing! A dinner so well crafted. A place we felt so incredibly welcome. The flavors and craft inspiring me to get into the kitchen. What’s not pictured is the bread, beets and dessert. Because who has the wherewithal to photograph a tahini ice cream before eating it?! #shukette #nycdinner #nycrestaurant #restaurant #nyc by @saucybakery

@colonienyc we are gutted and crushed. You were a home away from home. A place that was a culinary sanctuary where we always felt welcome and taken care of. You gave us respite from everyday nonsense. The food and hospitality just everything was and is perfect, Everytime. When we say we will miss you, we mean the whole team, the chefs, the cooks, the wait staff, the bartenders, the servers just each and everyone of you created the vibe and the place—The Colonie. All of you are beyond talented and we know your talents will shine elsewhere. You gave us birthdays, datenights, and really amazing New Years. Each bite as delicious and perfect as the last. We love you and are beyond sad to let you go.
