An evening inspired by the wild.

On September 21, we teamed up with @savouredhere for @savourthewild , a one-night collaboration celebrating foraged ingredients from the land and sea of the Pacific Northwest.

Executive Chef Jasper Cruickshank, Chef Colton Armstrong-Ashley of Savoured Here, and Bar Manager Alexa Gervais created a multi-course tasting menu, complemented by original gin cocktails made for the occasion.

Throughout the evening, the team shared the inspiration behind each course and pairing, along with a sneak preview of the Savoured Here documentary series and the stories and landscapes that shaped it.

Thank you to everyone who joined us, and to @empress1908gin and @maisonperrierca for making the evening possible. 🤍

What a night at L’Abattoir 🍽️

We celebrated Episode 2 “Forage, Land & Sea”featuring Robin Jackson from @westcoast_mycology and Amanda Swinimer @dakinitidalwilds, with an intimate Pacific Northwest feast built around everything that episode is about.

Executive Chef Jasper Cruickshank @mrcookit and our very own Savoured Here host, Colton Armstrong-Ashley @colton.aa, teamed up with Bar Manager Alexa Gervais @alexagervais for a tasting menu showcasing the region’s land and sea, paired with cocktails that told the same story.

This is exactly why we made this series. Not just to document the people behind Vancouver Island’s food culture, but to keep creating moments where that culture gets celebrated in person, around a table, with the people who live it.

Thank you to everyone who came out, and to @labattoir_van, @empress1908gin, and @maisonperrierca for helping bring the evening together.

It started with a deep appreciation for Vancouver Island, the food that comes from it, and the people behind it.

Today, we’re proud to share Savoured Here, a six-part docuseries exploring our connection to food, land and community.

From farmers and foragers to producers, chefs and knowledge keepers, each episode takes us into the worlds of those shaping how we grow, gather, cook and eat here.

An incredible amount of work, care and collaboration went into this series. At its heart is a belief that where our food comes from matters, and that the people and relationships behind it deserve to be celebrated.

Behind every “farm to table” menu is a story like this one.

Brian Tesolin and Matt Cusano cut their teeth under Chef Brad at Olo, where the philosophy was simple: build relationships with a handful of farmers and use everything they grow, instead of spreading thin across hundreds of suppliers.

What that actually looked like day to day? Sometimes routine. Sometimes two lambs showing up in a cardboard box wrapped in packing tape with nowhere to put them.

The kind of detail that doesn’t make it onto a menu.

There’s something powerful about knowing where our food comes from.

Not just geographically, but emotionally. Understanding the people, ecosystems, and stories behind what ends up on our plates can change the way we see the world around us.

In Episode 2 of Savoured Here, seaweed harvester and educator Amanda Swinimer reflects on our relationship with food, nature, and the sense of wonder that can emerge when we slow down and look a little closer.

🎬 Savoured Here premieres this fall.

One of the things that stood out while making Savoured Here was just how interconnected Southern Vancouver Island’s food community really is.

Farmers, fishers, foragers, winemakers, chefs, and consumers all play a role in shaping the region’s food culture. It’s a network built on relationships, trust, and a shared commitment to supporting local.

In Episode 1, BC Minister of Agriculture @lanapopham reflects on the connections between producers and restaurants that helped shape the region’s food identity.

🎬 Savoured Here premieres this fall.

“Because if it’s food, it’s medicine.”

In Episode 1 of Savoured Here, Philip Kevin Paul reflects on a relationship with food that has shaped these lands for generations.

For much of human history, food and medicine weren’t separate ideas. Food was nourishment. Food was prevention. Food was connection to the land, the seasons, and community.

Today, the distance between food and medicine continues to grow. Kevin invites us to reconsider that relationship and what may have been lost along the way.

Food is never just what’s on the plate.
