Brewery & the Beast Vancouver Island is almost here, and we’re serving our coast. 🌊🐙 This Sunday, September 27, find us at Starlight Stadium alongside 50+ chefs and restaurants for one of Vancouver Island’s biggest food events of the year. This is our last stop on the Brewery and The Beast tour and we’re proud to wrap up at home. Chef @colton.aa will be serving wild Pacific octopus from @FinestAtSea, glazed with charred carrot BBQ and grilled over cedar with carrot top & sea-foraged gremolata. We’ll save you a bite. #breweryamdthebeast #YYJEats 📸 @samanrzpr / @alpenglow.media by @savourthewild
It started with a deep appreciation for Vancouver Island, the food that comes from it, and the people behind it. Today, we’re proud to share Savoured Here, a six-part docuseries exploring our connection to food, land and community. From farmers and foragers to producers, chefs and knowledge keepers, each episode takes us into the worlds of those shaping how we grow, gather, cook and eat here. An incredible amount of work, care and collaboration went into this series. At its heart is a belief that where our food comes from matters, and that the people and relationships behind it deserve to be celebrated. Now streaming on TELUS Optik TV + Stream+ by @savourthewild

🌊 Straight from the ocean… and I mean STRAIGHT from the ocean. I had the incredible opportunity to get out on the water with @savourthewild and see firsthand where some of BC’s wild seafood comes from. Followed by tasting fresh uni prepared by @colton.aa 🤯 And somehow we got an extra BC experience along the way… ORCAS right in the harbour! 🫍 Huge thank you to everyone involved for having me aboard. Such a cool way to learn more about what’s being harvested right here off our coast. Now YOU can get in on the experience! 👇 🦪 Divers’ Bounty Masterclass 📍 Finest At Sea — James Bay 📅 August 20, 2026 ⏰ 6:30–8:30 PM 🎟️ $55 — only 30 seats! Meet Chef @colton.aa of @savourthewild Known for creating immersive dining experiences that celebrate Vancouver Island, Colton brings together exceptional ingredients, thoughtful storytelling, and a deep respect for the people and places behind every meal. That passion for storytelling recently expanded beyond the table with @savouredhere, the documentary series he co-created with Creative Director @samanrzpr. Premiering September 22 on TELUS Optik TV and TELUS Stream+, the series explores the people, places, and food culture of Southern Vancouver Island. Now, he’s bringing that same spirit to Brewery & the Beast Calgary with a Pacific Northwest-inspired creation. We’ll save the full reveal for the event—but trust us, it’s one you won’t want to miss. #BreweryAndTheBeast #YYCFood #SavourTheWild #SavouredHere #CanadianChefs CulinaryTourism by @savourthewild
Back again. More of this, please 🏔️ 🛥️ by @savourthewild
The finale. The mandate was to put together a meal that would glue everyone to their chairs. The transition from tender prime to unbelievably tender comté custard was a knockout punch to that end. Everyone slept well on the last night. Plating this all up for staff meal was a particularly proud moment. Back at it at month’s end, I’m looking forward to stepping it up another level now that I know what I’m getting in to. by @savourthewild
