matcha affogato 🍵🍨creamy vanilla ice cream with vibrant and earthy matcha.this matcha affogato is dairy-free, naturally sweetened, and incredibly delicious.the rich cashew and coconut ice cream creates the perfect base for a freshly whisked matcha, giving you a dessert that is both indulgent and nourishing✨ingredients1 1/2c cashews (soaked overnight)1 can full fat coconut milk1/3c maple syrup1 tsp salt1 tsp vanilla extract to serve3g @sayuriteas midori matcha15ml hot water1. add the soaked cashews, coconut milk, maple syrup, salt, and vanilla to a high-speed blender and blend until completely smooth.2. churn in an ice cream maker for around 30 minutes or until thick and creamy.3. whisk 3g matcha with 15ml hot water until smooth and frothy.4. scoop the ice cream into a bowl or glass and pour the freshly prepared matcha over the top. 5. enjoy immediately✨ by @sayuriteas

honey vanilla matcha madeleines 🍯🍵classic french madeleines reimagined with a japanese twist, dipped in silky @sayuriteas matcha chocolate and finished with a dusting of matcha✨naturally gluten-free and refined sugar-free for a simple, modern take on a true classicingredientsmadeleines2 eggs (room temperature) 45g honey 1 tsp vanilla extract 70g almond flour 30g oat flour 20g tapioca starch 1 tsp baking powder pinch of fine salt 60g butter (melted and cooled)1 bar sayuri matcha chocolate 2 tsp coconut oil matcha powder (dusting)1. in a stand mixer, beat the eggs and honey for 4–5 minutes until pale and thick.2. in a separate bowl, whisk together the almond flour, oat flour, tapioca starch, baking powder, and salt.3. gently fold the dry ingredients into the egg mixture until just combined.4. slowly stream in the melted butter while folding until the batter is smooth and airy. do not overmix!5. cover and refrigerate for at least 2 hours (preferably overnight).6. preheat the oven to 220C and lightly grease a madeleine pan (i like to refrigerate the pan to achieve the classic hump). fill each mold about ¾ full with the chilled batter.7. bake for 3 minutes at 220C then reduce to 190C and bake for 5-6 more minutes, until lightly golden with a beautiful hump.8. cool for a few minutes before removing from the pan.9. melt the matcha chocolate with the coconut oil until smooth. dip each madeleine halfway into the chocolate.10. finish with a dusting of matcha powder and allow the coating to set. by @sayuriteas
