So I came up with this potato dish this the other night. Thin sliced (with a wide hand peeler) potatoes mixed with melted butter and Fox Point seasoning @penzey_spices and a bit more salt. I tried to make roses but ended up with ruffles. I tossed them in the oven at 400 for about 45 min or until golden and cooked through. I’m keeping this one on rotation and plan to play with it a bit more. It was delicious. by @sbonnin

The final part of our trip was in Bozeman, Montana where Ralph competed in his 4th Belgian Waffle Ride of the series. 105 miles of gravel riding through the beautiful mountains and roads of Montana. He again took 2nd in his age group and took 1st for the Series in his age group (60-64) for competing in all of the races and having placed so high. We are so proud of him. Our trip continued to Yellowstone for 3 nights. It was awe inspiring to see so many different types of geological sites. Geysers, hot springs, mud pots, fumeroles (steam vents) and the travertine terraces in the last few pics. Different minerals and chemicals make up the different colors. taken in Yellowstone National Park by @sbonnin

The past couple of weeks, Ralph and I took a little road trip! We started our trip driving to Cedar City, UT for Ralph’s 3rd gravel bike race in the Belgian Waffle Ride race series. He took 2nd in his age group as he did in San Diego and as he did in Scottsdale, AZ. If anything, he’s consistent. We then traveled to Jackson, Wyoming for a couple days taking in nature, rest, and white water rafting. Part 2 tomorrow. by @sbonnin

Each day, Josh drove us to different places to explore. 
-we drove to Wales and saw Tintern Abbey built in the 12th century
-we did a hike up and down hills to see King Arthur’s Cave. Emily’s dog, part Huskie helped drag my sorry butt up the hills on the way back. If it weren’t for her, I’d probably still be out there. 
-we visited Cheddar and saw the caves where they aged English Cheddar, which is nothing like the orange cheese we call cheddar. 
- Ralph couldn’t find a small hat to fit him but he looks like he fits in
-a bit of home. Someone had a Disney obsession
-we went to Glastonbury and saw the Abbey and the town. How many shops selling crystals can one town have? A lot apparently. 
But it was a cute place
-then on to Wells. We saw the Wells Cathedral, another Gothic peace of architecture. 
-and the Bishop’s Palace with a moat and swans. Love a good moat. 
-next village was Bradford-on-Avon with its very old pub and tea room. A hotel built in 1500. It was a beautiful place to roam down back streets and just explore. 
-last photo is downtown Frome also with cute  backstreets and shops. Lots of art galleries and handmade things. We will be back. by @sbonnin

Here are more Bath photos. Although we did do almost daily excursions from Bath, I’ll show you those tomorrow. Anyone a Bridgerton fan? Many of the settings from Bath are in that show.

After Northampton we headed towards the County of Somerset and to Bath for the last week of the trip. 
-Stonehenge on a sunny day
-we have granddogs and one of them is also a US transplant; Mira the husky mix. And look at Burger’s sweet face!
- I gasped audibly as we rounded the corner to the top of the hill overlooking Bath. Incredible! Georgian and Roman architecture. The whole city is a UNESCO World Heritage Site 
-we stayed at Hotel Indigo in Bath. It was whimsical and beautiful. Great amenities on a quiet street though in the city center. But not where the crowds were. 
-me and the architectural details. Look at this stone work on the side of a building. I’ve never seen anything like that with holes. I imagined bees or wasps making homes in there. But I didn’t see that. 
-Pulteney Bridge. The only bridge in England with buildings on both sides. 
-Colorful houses in Bristol, a day trip we took on the train just 30 minutes away. 
-Clifton Suspension Bridge in Bristol. We walked across it. Very high. Not afraid though the rest of the gang was not happy about it. 
-some of the signs crack me up. 
-Back to Bath, we visited the Roman Baths and Bath Abbey is right next door. by @sbonnin

The reason for going to England when we did was to be there to support our daughter Emily at the English Bench Press Championships. She lifted her personal best at 82.5 kg (182 lbs) and took 4th in her weight class! We are so happy for her. It was quite exciting to see. by @sbonnin
