Feeling grateful and honoured to be part of the @women_of_cacao summit 2026 “Farmers & Makers Voices of Asia” panel, and to share diverse stories of cacao and craft chocolate across Asia.

A huge THANK YOU to Shirley Lum @schocolatemagic, the founder of @torontochocolatesociety for moderating such a thoughtful and lively discussion with @kuwilma, @cuilanz, and myself. It was heartfelt to share our stories, challenges, and actions we are taking around the theme: Regenerating Cacao.

Over the past few years, Taiwan cacao has gained recognition on the international stage. People are often pleasantly surprised to learn that there is cacao grown in Taiwan, or even chocolate made with Taiwan-grown cacao.

Some observations from my visits to cacao farms in Taiwan, and the ways farmers are working to restore and care for the land:

🪴Soil health - Many farmers use leaves from pruning to cover crops to return nutrients back to the soil.

🌱Reducing reliance on chemicals - many farmers are minimizing or avoiding the use of synthetic fertilizers and harmful pesticides.

🦆Habitat protection - preserving existing trees and small shrubs on the land. These plants provide habitats for birds and non-venomous snakes, which help control pests naturally and contribute to a healthier ecosystem.

💦Water retention - healthy soil is better to retain moisture during dry periods while also allowing excess water to drain during heavy rains and typhoon season.

The story began with Olivia’s adventures exploring Taiwan’s cacao culture and cacao farms in March 2024, and visiting Meya Farm in Pingtung, in southern Taiwan for the first time. After seeing firsthand how much care and dedication goes into maintaining a cacao farm, and how they stay resilient through typhoon season, how can we not share their stories with everyone? 很榮幸受邀參與 2026 Women of Cacao (WOC) Global Summit，與來自全球各地的女性可可先驅、生產者與職人們在線上一同交流！

在這次的分享中，我也帶著台灣的農業風土與創新經驗走向國際舞台：

🌱 把台灣風土「吃」進去——以可可脂為載體的風味創新
大家看到我們的巧克力磚時，常以為它就是一般的巧克力。但我們換了一個思考視角：如果台灣世界級的精品咖啡與莊園茶，不只是用「喝」的，而是能「吃」進去的風土呢？

我們跳脫傳統巧克力的配方，不使用黑可可膏，而是以純淨的可可脂作為風味萃取的載體，融入台灣單一莊園咖啡與特色茶葉；更以土生土長的黃豆粉取代乳粉，打造出質地細膩、能完整透出茶花香與細緻果酸的純植物配方。讓可可成為媒介，向大家呈現台灣的風土滋味。

🍫 「產地即市場」的台灣 Tree-to-Bar 能量

聊到台灣與全球精品巧克力的演進，台灣最獨特的優勢就在於我們既是消費市場，同時也是可可產地！農民與巧克力工藝師之間幾乎沒有距離，風味調整與後製發酵實驗能即時溝通迭代；加上台灣消費者深厚的品茶與精品咖啡品飲底蘊，讓我們能在極短時間內與國際頂尖水準接軌，在 ICA 等國際舞台上被看見。

面對近年全球大宗可可原料的成本波動，我們更深刻感受到：當大眾市場開始反思價格與價值時，能誠實傳遞土地風土（Terroir）與文化底蘊的工藝巧克力，正是改變消費者味蕾認知的最好契機。

Excited to be hosting an inaugural Asian Women of Cacao event on Friday September 18th, 2026 7:30am (EST) for the third (and last) @women_of_cacao Summit 2026. Honoured to moderate a lively and timely panel discussion with a focus on evolution, impact, and regeneration of cacao and award winning chocolates in Asia.

The panel discussion is a FREE event to join online. Can’t make it due to other commitments? We do highly recommend however, to get an All Access Pass to get all the recordings, and to become a member at Women of Cacao, because it’s an amazing global community!

Lunch with @karimbhaloo and his colleagues,
complete with swapping stories of bucket lists to check off or just done…. In our case, Piura adventure with @cacaolifeperu and @cacaolife.pe , and then going off on our own to Cusco and then slowly we descend by train to sacred site of Macchu Picchu for a memorable experience.
My surprise “treat”: share with friends and staff (yes, front/back of the house) this beautifully crafted chocolate bar made with fine cacao beans from Piura, Peru by @scrap_chocolates that followed us from 11th @salondelcacaoychocolateperu in Lima.

Upon opening the beautifully designed package, my nose was greeted with fruity, chocolatey and caramel aromas. Each of us reached for seconds as our taste buds savoured complex fruits, panela and rich chocolatey flavours. What better way to kick off the weekend a bit early than with a wee bit of chocolate magic from this part of Peru?
