We pissed off some people tonight, but we put some absolute bangers out. Thank you for supporting ROUGH DRAFT: the School Pizza round pie program launch.

Seriously though, sorry for the casualties along the way. Shoot us a message for a refund. We’ll make it up to you. taken in Bluffton, South Carolina by @schoolpizza

We posted a photo of a round thing, and suddenly people have been hitting us up with late-night pizza calls.

A few reminders:

We are a food truck. We do not have a brick-and-mortar location.

Our location varies based on how far $4 in diesel fuel takes us.

We post our schedule multiple times a week and also send out a monthly email newsletter. You can sign up for it on our website at eatschoolpizza.com.

We hold public, walk-up bakes a few times a month, along with preorder-only bakes about once a month.

Currently, we operate mostly on Sundays, but we’re looking to add Friday nights soon.

As for the round pies, we’re about two weeks out—late September/early October.

Let us know if you have any questions. taken in Bluffton, South Carolina by @schoolpizza

Today was a special day for us.

For the first time since starting this little business almost three years ago, neither of us (husband or wife) had to be on-site for a public bake. So, like any sensible people with a little extra free time, we rode a seesaw and spent time enjoying our cute little town.

We stopped by the bake anyway, not because we needed to, but because we wanted to support our crew. And they absolutely held it down. 💪🏼🖤

Seeing so many familiar faces walking around with our pizza boxes, enjoying a beautiful Sunday afternoon, was a feeling that’s hard to put into words.

We get a lot of questions about School Pizza and what’s next. And while we’re at a pivotal moment in this story, we’re constantly reminding ourselves why we started doing this in the first place.

We want to build a life that gives us more time with the most important person in our world: our baby girl.

Today felt like a small step toward that.

We’re incredibly grateful for our crew, our customers, and everyone who’s helped us get this far.

Much love,

The SP Family 🖤 taken in Bluffton, South Carolina by @schoolpizza

Expired dreams and photos from September 6, 2025.

Crazy to think it’s been over a year since we started talking about a cheesesteak collab with Patrick Malone (@malonebarbecue and @1776sandwichco). The creations pictured are all his, and we’re not taking any credit for them. We just took the photos.

We had this grand plan, but then beef prices went crazy, logistics seemed impossible, and we just couldn’t find the perfect time to bring the vision to life. We’d have to sell a ton of them just to maybe turn a profit after all the time and effort involved.

What do you think? Should we stop being wussies and full-send these baddies? taken in Bluffton, South Carolina by @schoolpizza

Whole round pies will be available soon for preorder only. The first few drops will be announced via our newsletter, which you can sign up for on our website.

To prevent any confusion, we don’t plan on offering both styles at the same public bake. By default, we’ll be serving Detroit-style pies. When we’re holding a preorder bake for whole round pies, we’ll make it objectively clear. taken in Bluffton, South Carolina by @schoolpizza

Now that we’ve pre-sold you some pizza, it’s time to talk about the important stuff.

We don’t care about authenticity or traditions. Our round pies don’t follow a particular regional style. This baby was born, bred, and baked in Bluffton, South Carolina.

We’ve settled on 68% hydration and 72 hours of fermentation using Caputo flour. This will likely change for reasons we can’t even explain, but it’ll sound cool.

Cheese is low-moisture, whole-milk mozzarella from Wisconsin, made by @aaronrodgers12 when he was good.

Sauce is a blend of @biancodinapolitomatoes. Same recipe as our Detroits. It works, and we’re not going to complicate it.

We hit each pie with Romano cheese prebake, which brings the saltiness. Then we finish each pie with Parmigiano Reggiano, which provides the funk and drama for photos.

In total, there are three different types of cheese used on our plain round pie. You won’t find gobs of mozzarella on these, and you can’t order extra cheese. The goal is balance.

We like 1.9 scoops of cheese and 1.9 scoops of sauce. That .1 makes a difference.

We started out at 600g dough balls, upped it to 650g, then dropped it to 620g. We might trim another ~5 grams to get a thinner stretch, but so far, 620g should work for both our 18” rounds and grandmas. This is more than double the dough weight of our Detroits, and it’s awkward handling such large balls.

They will be hard-baked. If the recent photos look like a burned pie to you, please don’t place an order.

Yes, we plan on selling whole pies once we can lock in our oven cadence. They’ll be preorder-only for now. Since they’re baked directly on a hot stone, we need to respect the oven recovery period to give them the proper bake they deserve.

Yes, we’ll offer other toppings and specials. For now, though, we want you to judge the pie in its bare form.

Yes, BFC will make a return in BOTH Detroit and round pie formats. Tossed in a teaser for you peeps who keep asking about it. (Will not be available on 10/2.)

There are still a few slots left for our official round pie launch event this Friday (10/2) at @lot9brew. We’ll be serving fresh, hot slices. Head to our website to preorder:

When the ROUGH DRAFT refuses to stay a ROUGH DRAFT.

Join us this Friday night (10/2) at @lot9brew for the official launch of the School Pizza round pie program.

Preordering is required for this event, and each admission includes three slices of our newest offering. Slots are limited to match our baking cycles and keep every pie as fresh and hot as possible.

Head to our website for more information and to preorder:

This is a huge change for us. Although it might seem simple, round pies are an entirely different business model and offering for School Pizza. We’ve put a lot of work into getting these right, and we can’t wait to finally introduce you to these beauties.

See you Friday. by @schoolpizza

Check out that sweet lid from @oystercoastsupplyco! We can absolutely appreciate some tasteful, locally inspired gear. Please support our friends and give them a follow!

Our next bake is at @lot9brew on Sunday, 9/27, starting at 3:00 PM. We expect to have enough supplies to be on-site until 6:00ish.

FEATURED SPECIAL

🌶️ Spicy Supreme: mozzarella, red sauce, pepperoni, Italian sausage, red onion, fresh jalapeños, finished with aged parm and HOT HONEY. Available while supplies last!

Classic cheese and pepperoni options will also be available. If we’re running low on supplies, we’ll update via stories.

This is a public, walk-up bake. No preorders are needed or offered. Simply order at the window or tent, and we’ll text you when it’s ready. If your large order is split between baking cycles, we’ll hand you a pager.

Let us know if you plan on making it out! 🖤 by @schoolpizza
