How every coffee earns its spot at Seam.

Cupping is how we taste samples from the farms we work with. Every batch of coffee is different, every lot considered. Different harvest, different farm, different way it was dried. Through cupping we can tell them apart and pick out the best lots.

The coffee gets cupped with the same grind, same weight and water in every cup. We taste for sweetness, acidity and flavour profiles

Postcards from the Hatch

Winter’s settled in properly now. The mornings start cold enough that the steam off a cup is the first thing you notice, and everyone stands a little closer to the window than they did three months ago.

We’ve come to love it. Cold hands wrapped around warm cups, the same faces at the same times, conversations that carry on well past the last sip.

That’s more or less the whole point of our Home Brewers courses. A few hours spent slowing down the routine, until the variables stop feeling like guesswork. Everyone brews, everyone tastes, everyone leaves with a slightly different answer to that question.

@seam.coffee started with a trip to Burundi. Founder David Walstra visited coffee farms, saw how farmers were being paid, and decided the whole thing needed to work differently.

There’s a version of specialty coffee that’s mostly aesthetic. Seam is not that. Built around full transparency and direct trade, they visit farms, negotiate prices above the cost of production, and disclose exactly what each farmer earned — a first for South Africa. Three-time winner of Best Coffee Roastery South Africa. Their tagline is “considered coffee” and they mean every word of it.
