As an aspiring elderly™ I can confidently say I love lemon bars (also, get outta my yard, bring our boys home, that new SClub 7 CD is off the chain, etc). I used Ina Garten’s recipe, since my friend Lynae brought me 80 pounds of lemons from her backyard and it was a rainy day and that all just seems like a Barefoot Contessa episode setup to me. This recipe is ✨DIFFERENT✨ than other lemon bars because it has a freaking shortbread crust that Ted Lasso would be proud of. It’s zesty, it’s zingy, it’s buttery and crunchy. It’s perfect.

I DID however, not have the right size pan for the recipe. Did this stop me? No. Did I use measurements that would actually fit a pan I do own? Of course not. Is the shortbread crust more of a deep dish, whole shortbread cookie under the lemon curd situation? You betcha. Worth it. 🍋

This happened in MAY but I work in social media and sometimes keeping up with my own feels exhausting :)
BUT I did get a perfect score and second place in the fruit pie division of the LA County Fair Pie Baking Contest with my strawberry rhubarb crumble pie aka “Rhubarbara”, and that deserves to be perceived. Thank you to my very wonderful friends who willingly participated in my trial runs of various crusts and fillings (and obliging my thorough pie review Google sheet) and @michaelarosereggio and @brinana8 and @adamwkeller and passenger pie holder extraordinaire @kiramrob for trekking all the way to Pomona to support! 🎡🥰🥧 by @seebethbake

The REAL challenge I want to see on the Great British Bake Off is having the bakers make something beautiful, put it in its own little makeshift cardboard box carseat, and drive no faster than 15 miles per hour with their confectionary landmine to its intended holiday destination across town in a city that doesn’t believe in repairing potholes. WOW everyone should eat this thing I just made up.

Pan fry some chickpeas and toss them with dill creole seasoning (thanks @smilnsinger) and a little sea salt, then nestle them into a little lettuce boat with @traderjoes garlic spread and a thin slice of lemon. It’s spicy, it’s tangy, it’s both dilly AND garlicky, and I foresee myself fixating on this for a minimum of two weeks by @seebethbake

I don’t think anyone understands the absolute chokehold @txhillcountryoliveoil peach balsamic vinegar has on me. Picked up this bottle in Fredericksburg last time I was visiting my parents and I have been rationing it 😂😭 Caprese with heirloom tomatoes, nectarines, and mozzarella on a bed of arugula and basil dressed in peach balsamic (with a little balsamic glaze on top for decoration). Lemon layer cake with lemon curd, lavender Swiss meringue buttercream and candied lemons (all made by me) for my sweet friend’s birthday! I think it was well received. :)

We have now learned to not make buttercream or attempt to assemble a layered cake on exceedingly hot days. Scroll to see me channeling Amy Poehler as the mom in Mean Girls to my cake/daughter Regina at the talent show. by @seebethbake

Abra Cadabra! I entered a pie baking contest sponsored by NPR, I’m testing recipes, I don’t think I’m actually even going to be able to be there myself now BUT any excuse to post my favorite strawberry rhubarb and crust combo I’ve made thus far. And there’s a theme song that’s trending?! LFG by @seebethbake

It’s a citrus upside down cake! 🍊
I used tangelo and oro blanco grapefruit and blood orange and I think a Meyer lemon may have snuck in there (thanks for the fresh harvest @lynaecook) and I have no idea how it tastes but I expect it to taste tart, and sweet, and hopefully like cake. Definitely want to try again with more variation in citrus color, and also get better at paring the skins away. by @seebethbake

What’s more American than putting an entire pound of butter into one normal sized baked good? Nothing. Nothing at all. That’s also why it’s called pound cake. Happy 4th of a July (whatever that even means) 🤷‍♀️🇺🇸🍓🫐🍰
