When soft pumpkin meets warm jaggery, magic happens.

🎃 Pumpkin Puri

• 250 g pumpkin purée
• 1 cup jaggery
• 3 cups whole wheat flour
• 2 tbsp rice flour
• 1 tbsp poppy seeds (khus khus)
• A pinch of salt
• Oil, for deep frying

Method:

1. Cook or steam the pumpkin and blend it into a smooth purée.
2. Mix the pumpkin purée with jaggery until well combined.
3. Add the wheat flour, rice flour, poppy seeds, and salt.
4. Knead into a soft, non-sticky dough. Let it rest for 10–15 minutes.
5. Divide into small balls, roll into puris, and deep-fry in hot oil until puffed and golden.

✨ Rose Rabdi (Perfect with Pumpkin Puri)

Ingredients:

• 1 litre full-fat milk
• 3–4 tbsp sugar (adjust to taste)
• ¼ tsp cardamom powder
• 1 tbsp chopped pistachios
• 1 tbsp chopped almonds
• 1 tbsp gulkand (optional, for a delicate rose flavour)
• A few dried rose petals (optional)

Method:

1. Bring the milk to a boil, then simmer on low heat until it reduces to about half its original volume, stirring often and scraping the cream from the sides back into the milk.
2. Stir in the sugar and cardamom.
3. Mix in the gulkand, if using, and cook for another minute.
4. Add the chopped nuts and let the rabdi cool slightly before serving. Garnish with dried rose petals.

Serve the warm pumpkin puris with chilled rabdi for the perfect combination of earthy, creamy, and indulgent flavours.

Some desserts deserve a little extra time… and this is definitely one of them. ❤️
