Six menus. Six rooms. One shared philosophy.

Looking back through the archives of Volumes 01 to 06, the standard was set. We built @serviceatseven to blur the line between a private tasting menu and a casual dinner party. It’s about the intention behind the plating, the final pour of a sauce, the conversations that start between strangers, and the moment the room stops feeling like a room full of separate tables.

The plates have long been cleared. The rooms are empty.

But what happened in them is still shaping what comes next.

Pulling glutamates from tomato water and kombu. Cured melon, pickled shallot, and time. A moment from Volume 06.

Lightly cured honeydew sits in the calcified shells of oysters pulled from the shores of the Salish Sea in British Columbia. There’s no seafood. But we wanted to mimic the sweet minerality those particular oysters are famous for. So we steeped clarified tomato water with kelp to anchor the melon and pickled shallot—a classic pairing with oysters.

Stay tuned for the next Volume announcement.

Foraged from the shell-strewn shores of Denman Island, brought back to the kitchen, and rebuilt from the molecule up.

This is the burnt honey shell cream cake from Service @ Seven Volume 06, representing a study in brutal physical tension where the ocean is forced into dairy. By blasting the sanitized shells at 500°F and immediately shocking them in cold heavy cream, the fat rapidly absorbs the toasted coastal minerality. That shell-infused cream hydrates the dense semolina and farmer’s cheese sponge cake, tempers the burnt honey, emulsifies directly into the muscovado sugar for the fish sauce caramel, and whips into the final dollop on top. Plated with a stabilized strawberry fluid gel.

#ServiceAtSeven #Hecooks #PrivateDining #AtlantaChef #SupperClub

Final plating on the fly. Getting that caramel and gel right on the plate during service without it looking messy.

The foundation of the dish’s minerality. Blasting these clean shells at 500°F breaks down the calcium carbonate so the fat in the cold cream can violently lock in that coastal salinity.

Where the narrative begins. Pulling raw ingredients straight from the tides of Denman Island instead of sourcing them through a purveyor changes the entire integrity of what hits the plate in Atlanta.

Volume 06: HIGH TIDE

For this service, the foundation was laid thousands of miles away on the shores of British Columbia. The tablescape itself served as a visual record of that coastline, anchoring a six-course study in salinity, preservation, and oceanic umami.

We opened by serving cured melon nestled into oyster shells hand-foraged from those exact BC beaches, finished with a structured cucumber sea foam and accompanied by cornbread with a kelp sea salt butter. As the evening progressed, the table moved into blackened tuna resting in a fermented aguachile, punctuated by a precise drop of goji berry reduction, and a main of kombu-glazed pork belly over a bed of sushi-spiced orzo.

In the glass: a tamarind and spiced chili clarified milk punch.

To close the service, the ocean carried straight through to dessert with a burnt honey shell cream cake grounded by the deep, savory contrast of a fish sauce caramel, before sending guests into the night with a final takeaway—a brown butter caramel chocolate chunk bread intended for breakfast the next morning.

Thank you to the guests who shared the room and the experience for this volume.

Last night in Atlanta, we built a direct bridge to the British Columbia coastline.

The entire genesis of Volume 06 came from the tides. Things the ocean shapes, leaves behind, and washes ashore found their way into the room, literally and figuratively.

Those Denman Island oyster shells weren’t just plating vessels. Beyond holding the cured honeydew melon, we steeped and infused heavy cream directly with the calcified shells so you were tasting the true mineral salinity of the coast.

Along the wood tables, dozens of raw coastal prints I took along the BC shoreline (from Squamish to the Sunshine Coast, Comox Valley, and Tofino) created the visual tide line under candlelight.

Six courses. A little surprise pour. A takeaway treat. 12 guests locked into the exact same wavelength.

Grateful for everyone who joined us for Volume 06.

Volume 06: High Tide.

Tonight we pull from the ocean. Six courses built on the mechanics of salt, smoke, and pressure. We broke down conch for a slow braise, cured honeydew to mimic the dense snap of a raw bar, and built foundational umami by cold-steeping wakame in pure tomato water.

The prep is done. We'll see you tonight.

There is an ethereal tension where a temperate rainforest drops directly into the Pacific. Old-growth timber and deep moss stand just feet from the saltwater. The atmosphere is completely volatile. A thick coastal mist can swallow the cedar groves whole, only to fracture moments later and reveal miles of bare stone and open ocean.

But the most staggering force out there is the water itself. We watched 12 foot tides roll in and out daily. Growing up on the Florida Gulf Coast, a 12 foot swell means a catastrophic hurricane is pushing a wall of water inland. Up in British Columbia, it is just an ordinary afternoon. The sheer volume of moving water completely alters the geography by the hour.

That massive fluctuation dictates how every living thing survives on the edge of that forest. When the ocean pulls back, the exposed zones become an immediate feeding ground. Black bears step right out of the dense tree line to hunt crab and shellfish among the rocks, living entirely on the ocean's clock.

Witnessing that extreme cycle, where the quiet of the ancient woods collides with the violence of the tide, completely shifted my perspective. We kept the cameras rolling the entire time, and our exploration of that coastal food system will form the foundation of the next Palate Passport.

You do not have to wait for the visual story to air. I was so captivated by the sheer scale of that environment that it became the direct catalyst for this weekend. Vol 06 High Tide is our attempt to plate this exact coastline at Service @ Seven. We are taking the aggressive salinity of the Pacific, the deep earthy umami of the rainforest, and the stark contrasts of British Columbia and putting them on the table in Atlanta.

It always starts with dirt.

You pull a memory out of the ground, like the humidity and tension of the Gulf Coast in Florida Gold, and try to make it make sense on a plate for twelve strangers. Then you do it again. You drag the Latin Coastline into a raw, concrete shell in Atlanta. You lean into the chaotic, vibrant abundance of a Summer Shift.

Before you know it, the ideas start getting sharper. More aggressive. We started applying strict, classical savory techniques to peak summer fruit in Hyper-Ripened, just to push the boundaries of what a tasting menu in a pop-up space could actually be. By Volume 05, The Nightshades, we were mapping out six-course, zero-waste explorations of a single botanical family.

When you’re in the weeds, sweating over the line and trying to get the next course out, you’re just cooking. But looking back at this archive, the evolution is undeniable. We didn’t just scale up the menu or add more seats. We built an entirely new frequency. The plating is tighter, the room is louder, the concepts are highly dialed, and the vision is fully locked.

The first five volumes set the baseline. Volume 06 is about to shatter it.

If you’ve been watching the progression from the sidelines, now is the time to actually sit down and taste it. The room is only getting better, and the table is getting harder to book.

🍅 VOLUME 5: NIGHTSHADES 🍅
Looking for a different kind of dining experience? ✨

I recently experienced @serviceatseven Volume 5: Nightshades, an intimate six-course communal tasting by self-taught chef Kyle Tyler @hecooksco, where every dish celebrated the flavors of summer—tomatoes, peppers, eggplants, tomatillos, and potatoes. Every course was thoughtfully curated, but my favorites were the blistered tomatillo and the heirloom tomato tartare.

What makes Service @ Seven so unique is that every volume features a new theme and takes place in a different location, making each dinner a one-of-a-kind experience. This one was hosted inside a private home with 16 guests, creating a warm, welcoming atmosphere that felt more like a dinner party than a restaurant. It was such a fun way to meet new people, share stories, and enjoy a delicious meal together.

Next up is Volume 6: High Tide, inspired by coastal brine, tidal ingredients, and crisp ocean flavors. Tickets are live now (link in their bio), and if this sounds like your kind of dining experience, I’d grab yours before they sell out!

Service Has Concluded // Volume 05: The Nightshades.

What started as a simple, frustrating surplus of fresh eggplant morphed into an eight-course blind tasting menu exploring the depth of the entire nightshade family. From blistered tomatillos and heirloom tomato tartare to Berkshire pork tenderloin with Thai eggplant relish, this service was all about turning routine market produce into something distinct.

A massive thank you to everyone who pulled up a seat, shared a glass, and made the room what it was. These nights don't happen without the energy you bring.

A good dinner party doesn't end at the door. Each guest took home a loaf of roasted banana and locally foraged fig bread for the morning after.
