I’ve been using this Processing Knife from @sordfishingproducts . Very impressed with how it holds up & stays sharp. I cut a lot of meat & it’s holding up! #knife #deer #deerhunting #hunting #deerprocessing by @sethgreenearcherbutcher

You can learn how to do it. You can be the one that passes it down to your kids. #venison #deer #deerhunting #hunting #deerprocessing by @sethgreenearcherbutcher

How I get a little more heat in the jalapeño cheddar @thebeardedbutchers summer sausage! #summersausage #venison #deer #deerhunting #hunting by @sethgreenearcherbutcher

Straight out of the smoker and into an ice bath. Here’s why I don’t skip this step:
• Stops carryover cooking. You’ve got it cooked where you want it. Cooling it down helps keep it from overcooking and drying out.
• Helps the casing peel. Especially with fibrous summer sausage casings, this helps them come off cleaner without taking meat with them.
• Reduces wrinkling. Helps keep that sausage plump instead of shriveled up.
• Firms up the texture. Gives the finished sausage a firmer bite and a better slice.

Hands down, the best summer sausage I’ve ever made or tasted!

The Mammoth from @grillagrills cooked these evenly from top to bottom. No hot spots, just great results.

And @thebeardedbutchers DIY kits make it easy to make your own summer sausage at home! #deer #deerprocessing #deerhunting #venison #hunting by @sethgreenearcherbutcher
