Each Blade Show I try to find one new maker to get a 🔪 from. This time, it was Josh from @edgeknifeworks. This is my first 🔪 with Procut and I am excited to see how it performs and sharpens up. His pal, Sam, from @avlcraftededge makes some cool 🔪 too! 🤙

This prolly should have been done on stones, but aint nobody got time for all that nonsense (I need to work on my stone sharpening technique). This santoku had an assymetric grind (80/20). The customer requested not to take a ton of steel off. This was my first assymetric knife I sharpened and am pretty happy with how it turned out.

Ignore the blem by the heel, I don't know what they were cutting but there is a bend in the steel. I did not want to remove more steel than necessary. taken in North Beach by @shebeknives

Cleaned the surface, put an edge on and moisturized the blade of this bad boy. It's for my neighbor who will prolly whack it on something so I left a toothy edge 🤙🔪 taken in North Beach by @shebeknives
