A lot recipe testing went into my menu for @Jumakitchen Ramadan Nights. What would scoop well, how things would pair, acid & salt levels. I deeped this properly.1 & 2. Milo Chocolate Delicé with chocolate & kuah Kapit base3. Five-spiced blackberry self saucing pudding4. Soya sauce caramel testing for consistency5. Sippi/Chippi (Sri Lankan sweet snack)6. Guest cheffing at @jumakitchen Ramadan Nights last Saturday 💫That Chocolate Cremeux _ Soya sauce caramel _ “Milo” Chocolate Cremeux_ Mascarpone cream_ Kuih Kapit piecesThis was a cheeky chocolate pot for people to snack on at home.Taking flavours from Malaysia, I incorporated them into a French classic.I made my own version of the popular drink Milo, less chocolatey & more malty, to add another dimension to the chocolate Cremeux. The soya sauce caramel is the salty hit that helped balance the richness of the pot. by @shhhweet_as
